Going beyond the usual cupcakes, brownies, and cakes, chefs Miko Aspiras and Kristine Lotilla are on a mission to showcase more than just the usual desserts created by local homegrown talent. And the market is ready for something other than the usual run-of-the-mill desserts...


Envisioned as a creative space, the concept behind The Workshop Bespoke Bakery is driven by passion and innovation where chefs Miko Aspiras and Kristine Lotilla can create, experiment, develop and execute new culinary ideas. "As pastry chefs, we wanted a space where we could create. If we ever got inspired, there would be a space for us to do it. This is our working shed," explained Miko Aspiras. Each lavish dessert reflects the pure, honest and sheer love and the artisan's passion in the creative process, and one bite is all you need to appreciate the new concept from chefs Miko Aspiras and Kristine Lotilla. The finest ingredients are transformed with both traditional and modern techniques for a range of truly innovative desserts. "All of our offerings are made of the finest ingredients, crafted with technique and precision. We give painstaking attention to detail, flavors, and quality. Each creation speaks of our team's dedication to the art of desserts," added Kristine Lotilla.


At The Workshop Bespoke Bakery, customers can find a wide array of French pastries, cakes, madeleines, cookies, artisanal bread, and luscious tarts that just sends your growing appetite into overdrive. Here's some of the absolute must-try desserts at The Workshop Bespoke Bakery...


Take the tempting Strawberry Tart (P 200), an elegant and moist tart topped with fresh strawberries, pure eye candy, and it absolutely tastes as good as it looks.


The sweetness of the elegant dessert is perfectly balanced by the tartness of the fresh strawberries for balanced yet indulgent notes. Each distinct note complements the other without overpowering it in a delicately balanced dessert.


The Manchego Cheesecake (P 225) is another sweet temptation with contrasting flavors, combining the sweet and salty notes of Manchego cheese with the richness of vanilla creme anglaise topped with almond slivers. Even the presentation of the dessert is a reflection of the unique style and attention to detail at The Workshop Bespoke Bakery. Go heavy on the vanilla creme anglaise and enjoy...


The Pistachio Roulade (P 175) is a light, moist yet fluffy pistachio-flavored chiffon draped in cream with a nutty filling, not too sweet with the subtle hints of pistachios coming through with each bite. Made from 100% pureed premium pistachios, the flavors are rich and clean. Best paired with The Workshop Bespoke Bakery's Madagascar Vanilla Iced Latte.


Say cheese. The Basque Burnt Cheesecake (P 175 Slice/P 1,300 Whole) is another impressive creation, a Spanish-style cheesecake with a caramelized crust and moist egg custard cheesecake served with The Workshop Bespoke Bakery's homemade dulce de leche pecans.


This, by far, is one of the best cheesecakes yet. Baked at a higher temperature for that distinct caramelized "burnt" top, the resulting textural contrasts adds to the uniqueness of the dessert. The light and delicate char and crispness and the oozing custardy core sets this apart from the usual cheesecake. A warm slice topped with the homemade dulce de leche pecans, it just can't get better than that.
