The new dishes offer diners a glimpse of Chili's innovative culinary style, going beyond the borders of Southwestern flavors drawing tasty cues from Latin American cuisine. Chili's takes its signature Southwestern flair to a whole new level with inventive new dishes. Dubbed as Top Fusion, the new new dishes reflect an inspired take on comforting favorites infused with bold combinations of vibrant flavors. And we get first dibs at Chili's newest location at Robinsons Galleria...

Located at Level 2 of Robinsons Galleria, Chili's exudes that casual and familiar  Southwestern vibe matched by impeccable service, and it all begins with a warm smile the minute you walk in all the way to your table. Good vibes...


Start with a refreshing beverage like the Watermelon Fresh Fruit Mist (P 130), or why not some of Chili's signature Margaritas? It's 5pm somewhere in the world...


Pair it with crisp Tostada Chips for a classic Chili's start...


...with the White Spinach Queso (P 435), a creamy dip with white queso and chopped spinach topped with sharp Monterey Jack cheese, tart house-made pico de gallo, fresh guacamole, chunks of queso crumble and chopped cilantro. Good things always start with crisp tostada chips at Chili's.


After the mandatory tostada chips, you're just about ready for Chili's new Top Fusions, starting with the Hand-Stuffed Baked Jalapeno (P 395), a hefty platter with eight pepper wedges filled with smoked chicken draped with a creamy blend of cheeses and drizzled with mildly sweet and smoky BBQ sauce. It's the jalapenos that round out the rich layers of flavors with its subtle and soothing heat. Served with pickled red onions, fresh cilantro, and thick ranch dressing, these tasty poppers pack some serious flavors. And that's just a preview of even more vibrant flavors yet to come with the new savory mains at Chili's...


The Salmon with Aji Amarillo Sauce (P 850) offers a light, healthy and flavorful option with a perfectly grilled fillet of salmon on a bed of seasoned potatoes, Argentine chimichurri and Peruvian aji amarillo sauce drizzled with a fruity chipotle sauce and topped with green onions for both color and flavor. The creamy and buttery notes of the premium salmon are kicked up by the nutty chimichurri and mildy sweet aji amarillo sauce without overpowering the delicate notes of the salmon in a tasty blend of South American flavors. The new dish is served with a side of roasted cream corn for a complete meal.


And here's the beef. Chili's Top Fusions includes a duo of steak dishes, the Chipotle Balsamic Steak (P 995) with a delicately seared slab of beef laid on a bed of potato rounds, chimichurri sauce and chipotle balsamic glaze. The sharp notes of the chipotle balsamic glaze tempers the savory richness of the steak for balanced notes...


...while the BBQ Steak with Chimichurri (P 995) offers a tender sirloin steak on a bed of creamy mashed potatoes and nutty chimichurri sauce topped with pickled red onions, white cheese, fresh cilantro and BBQ sauce. It's that blend of smoky BBQ sauce with the chimichurri and the sour pickled red onions and white cheese that add complex layers of flavors to the savory steak, and it works. One bite delivers the upfront flavors of the BBQ sauce followed by the chimichurri as the richness of the steak lines your palate tempered by the pickled red onions and rounded out by the white cheese. It's layer upon layer of flavor in a delicately balanced play of contrasting notes.


And if you're looking for lamb, Chili's got that covered too. The new Seared Lamb with Fig Sauce (P 1,250) offers three tender and juicy lamb chops dotted with creamy avocado sauce on a bed of fruity chipotle fig sauce served with roasted cream corn.


And just like the other savory dishes, it's the play on contrasting notes that complement the richness of the lamb, from the sweet chipotle fig sauce to the creamy avocado for refreshing new flavors. The lamb chops deliver clean flavors without the overpowering gamey hints, with just a whisper of smokiness to complete the dish.
