Sage Bespoke Grill's new Executive Chef de Cuisine, Sebastian Barcudes (R), brings authentic Argentine flavors to the Josper grills offering diners a unique Taste of Argentina with their world-class beef (for more on Sage Bespoke Grill, see my previous post, Serious Beef: We Steak and Wine Seriously...at Sage Bespoke Grill).


Drawing inspiration from his Argentine roots, Executive Chef de Cuisine Sebastian Barcudes recreates the rich culinary heritage from the land of the famed pampas and los gauchos. It's what makes Sage Bespoke Grill truly special, serving the world's best fresh from their Josper grill to your table.

Executive Chef de Cuisine Sebastian Barcudes and Makati Shangri-La, Manila Executive Chef Nicola Canuti present masterfully handcrafted Argentine steak knives used to meticulously slice the finest Argentine beef. There's a whole lot of tradition and history surrounding Argentina's beef, immortalized by the timeless gaucho...


...and Sebastian Barcudes aims to recreate the lore and romance behind the world-renowned Argentine beef at Sage Bespoke Grill. But before the mains, enjoy some of Sage Bespoke Grill's signature seafood offerings, like the Scallop Ceviche with red chili, cucumber and coriander. Elegantly plated, the dish offers fresh and clean flavors punctuated by the sweetness of fruits and vegetables with the bite of red onions and the fragrant notes of coriander.


The succulent scallops, sliced paper-thin, delivers a vibrant briny sweetness followed by the distinct notes of the fruits, vegetables and herbs coming together in a rich burst of flavors to open up your palate for the main course. After quick work on the starter, and this one goes by in a flash you'll want some more, the steaks are served ...

Your premium Josper-grilled Argentine Bolzico Beef from Urien Loza Carnes Argentina is paired with either Charred Young Vegetables (R) or Goat Cheese and Thyme Crumble with a choice of Chimichurri (my personal favorite), Criolla or Smoked Red Chili Sauce (L) for an authentic Taste of Argentina.

For the main course, and the highlight of A Taste of Argentina at Sage Bespoke Grill, the Argentine Beef Trio with Tenderloin, Ribeye, and Oyster Blade was served for a sumptuous sampler. From the farms of Urien Loza Carnes Argentina, our sampler featured three popular cuts on the menu. The farm produces a limited batch of their highly prized beef from steers with British origin raised in the legendary pampas and herded by the gauchos of Argentina. 100% all-natural with absolutely no hormones, tradition and food providence accompany each tender slice all the way to the Josper Grill to your plate. 


Take the Bolzico Argentine Beef Tenderloin (P 1,800++), for example, draped and topped with a flavorful Roasted Vegetable Charcoal adding both flavor and texture. The lean yet tender beef delivers deep and bold beefy notes with just the right bite, coating your palate with a savory richness. The Josper Grill retains the juices of the tenderloin, released with each and every bite.  


The Bolzico Argentine Beef Oyster Blade (P 1,400++) is slow-cooked at 56 degrees centigrade before grilling at the Josper Grill resulting in tender beef and equally beefy flavors. The savory notes deliver hints of nutty flavors with a subtle sweetness that can only come from one of the world's very best.


The perfect marbling with just the right layer of fat adds to the rich flavors and tender texture of the Bolzico Argentine Beef Ribeye (P 1,900++), my personal pick.
