That evening, Chef Loverdy presented a preview of the latest and probably most lavish Unlimited Madness upgrade yet with the Super Premium version at Teppanya featuring an impressive line-up of high-end dishes from fresh seafood including plump and large Hokkaido Scallops and Wild Alaskan Snow Crabs to Wagyu Beef from Australia and Japan, Australian Duck Breast and Iberico Secreto from Spain. The Super Premium Ultimate Madness set will be be initially available at the SM by the Bay location, eventually rolling out to their other branches. 


The feast began with premium Bluefin Tuna Otoro Sashimi, the fattiest part from the belly with a dab of aguachile made with Japanese Shishito chili and homemade pickled onions. The otoro with its beautiful speckled marbling just melts in your mouth releasing a burst of briny sweetness tempered by the Shishito chili and pickled onions for that delicately balanced finish. The opening act of the Super Premium Ultimate Madness preview sets the tone for the rest of the evening with fresh and clean flavors...


...followed by even more selections from the day's freshest catch. A quick glance at the menu inclusions reveal a mouthwatering list of handcrafted creations like Nigiri, Temaki and Aburi Sushi, Sashimi and Sashimi Platters, Makimono and Chef's Special Rolls

The day's freshest premium catch is the base for Teppanya's wide repertoire of seafood dishes, transformed by their skilled chefs into a variety of elegant expressions and flavors.  


After the first seafood courses, Chef Loverdy then ignites a light show at the teppan grill...


...for the Wagyu Usuyaki Roll, a savory roll with enoki mushrooms wrapped in a fork-tender slice of juicy Wagyu beef. The fiery grill is part of that signature Teppanya experience. Nothing beats being served dishes prepared right in front of you and served fresh off the teppan grill at its flavorful peak. And the slick performance is the icing on the cake.


It doesn't take long for the Wagyu Usuyaki Roll to get that seared finish, and Chef Loverdy delicately slices each roll...


...serving it topped with crisp garlic chips and Teppanya's own special sauce. The deep, nutty hints of the mushrooms add both texture and flavor with each bite, perfectly finished by the buttery richness of the Wagyu beef.  


In between bites, the Wagyu Aburi and Wagyu Aburi with Ikura continued the savory procession started by the Wagyu Usuyaki Roll served earlier. The clean and fresh richness of the Wagyu beef cuts through with a flavorful punch while the Ikura or salmon roe brings that layer of contrasting sharpness and briny sweetness to the palate for another delectable play on contrasting yet balanced flavors. 


The Hokkaido Giant Scallop is one of the many featured dishes in the Super Premium Ultimate Madness package for a succulent seafood treat. Fresh off the cold waters of Hokkaido, each bite delivers deep, clean and delicate notes that can only come from cold water seafood. 


Gently seared on the grill for a few minutes, the Hokkaido Giant Scallop is one more opulent addition to the new Super Premium Ultimate Madness at Teppanya. Topped with fish roe and spring onions, each juicy and succulent bite lingers on the palate draping it with rich briny notes. That's pure indulgence. And that's part of the new Super Premium Ultimate Madness menu at Teppanya


One more Hokkaido Giant Scallop? Yes, please. The Giant Hokkaido Scallops is just one of many tasty highlights from the Super Premium Ultimate Madness menu at Teppanya...


...and there's more. The elegantly plated Wild Alaskan Snow Crab is another prime catch with its light yet briny sweet notes teasing the palate. It's easy to pick the crab meat off the shell, and a bite just highlights the flavorful difference of the cold water seafood catch versus the usual seafood. The seafood and Wagyu beef starters alone are enough reasons to visit Teppanya.


A refreshing Lemon Sorbet was served before the next set of courses to cleanse the palate...


...starting with the Emperor Aburi Set with Foie Gras, Wagyu with Black Truffle and Unagi. Each aburi brings its own unique flavors from the bold beefy notes of the Wagyu beef made richer with hints of indulgent black truffle, the decadent richness of foie gras and the smoky sweetness of unagi for a savory trifecta at Teppanya.


The first of the savory steaks were then presented starting with the Australian Darling Downs Wagyu MB5 Picanha taking the spotlight on the teppan grill...


...expertly seared, rested then sliced by Chef Loverdy...


...and served. The beautifully marbled Australian Darling Downs Wagyu MB5 Picanha just melts in your mouth releasing luscious savory notes. Premium Australian Wagyu has a similar marbling pattern to Japanese Wagyu and a true Wagyu connoisseur can spot the subtle and nuanced differences in flavor and mouthfeel. At Teppanya, you can indulge in both Australian and Japanese Wagyu, and experience the distinct savory richness of both prized cuts of beef in one place.  


Perfectly grilled to medium with a juicy pink center, the first of the premium Wagyu beef courses at Teppanya is an impressive start to a memorable teppan feast.

With its fine speckled marbling, each bite delivers a flavorful burst of pure and clean buttery notes. Raised and processed in Japan's famed Miyazaki prefecture, it just doesn't get more legit than this.  

Each dish served so far is an elevated experience in a continuous progression of world-class ingredients. And it just keeps getting better with each successive dish at Teppanya...  


Chef Loverdy then prepares Japanese Fried Rice or chahan to pair with the savory courses...


...in another masterful display of skill and precision on the teppan grill. The hearty bowl of chahan is great as is and a comforting meal in itself. But there's more from the Super Premium Ultimate Madness at Teppanya


Fire and flashy knife work announce the next savory dish...


...with the Iberico Secreto Steak from Spain's famed "pata negra" breed or black pigs. Considered the very best cut from the Spanish black pig, the Iberico Secreto Steak is richly marbled with thin layers of fat for that tender and juicy finish. Iberico Secreto is the thin cut hidden on the side of the neck between the shoulder blade and loin, with each pig yielding only two cuts which explains its premium pricing. Each bite delivers a subtle nutty sweetness finished by juicy and savory notes and just a hint of smokiness from the grill. Where else can you enjoy Iberico Secreto fresh of the teppan grill? 


The A5 Wagyu Sando is another tasty bite that impresses with its slab of Wagyu beef in between pillow soft brioche topped with gold leaf. One bite is pure beefy bliss...

For the second bite, gently slide a slab of Wagyu beef on the proprietary house pepper blend topped with crisp paper thin garlic chips and repeat. The specialty house sauce, pepper blend and garlic chips at Teppanya complement the line-up of Wagyu and Iberico Secreto adding even more flavor and textural contrasts.
