That's right, none of the noodles are sent from a central commissary, it's all made in-house for all Moshi Koshi Noodle Boss branches. High-tech automation blends seamlessly with tradition producing noodles of the highest quality with the consistency necessary to keep pace with its casual dining format. Soft yet firm with that springy texture for that delectable bite, the fresh made noodles alone make Moshi Koshi Noodle Boss a tasty stop. And to best enjoy your bowl of noodles, you'll need to check the Koshi Clock. Once your bowl is served, the clock starts ticking and that window for noodle perfection gets smaller with each passing minute. For thick and chewy wheat Udon noodles, diners have eight minutes before the noodles become too soft simmering too long in the hot broth. Chinese-style wheat Ramen noodles are best enjoyed within seven minutes while the thin buckwheat Soba noodles should be consumed within five minutes. Beyond the recommended time frame, the chewy texture is lost and its clean and delicate flavors become muted by the broth and other ingredients. The thick udon noodles pair well with the savory beef with its deep and robust flavors, while the thinner soba noodles complement the light crispness of the succulent prawns coated in batter for contrasting textures and flavors. But you have to enjoy it using the Koshi Clock to experience the noodles at its peak of both texture and flavor with eight minutes for the udon, seven minutes for the ramen and five minutes for soba which means eat first and shoot later. That was new to me, but experiencing koshi noodle perfection was the goal that day. And it just made all the difference in rediscovering what a proper bowl of ramen should be, without the hype and social media clutter.  


If you want some soothing heat with your noodles, try the Spice Series (from P 295) variants like the Tantanmen or the Curry Ramen. Ramen, soba and udon, each bowl served at its flavorful and textural peak. That's the Moshi Koshi Noodle Boss difference.
