Chef Ken Leung served a lavish menu to showcase the premium roast goose, from dim sum to soup, mains and dessert. The special menu is good for five to ten, perfect for families and special gatherings this holiday season (see contact details below for inquiries on prices and rates). The starters were then served, a duo of tasty steamed and fried dim sum masterfully prepared by Chef Ken and his team. The intricate Steamed Seafood Dumplings with Caviar offered delicate notes...


...with fresh and clean flavors in every bite. The caviar added distinct and sharp notes to complement the subtle and nuanced flavors of the delicate dim sum. In contrast, Chef Ken presented texture and rich flavors with his next dim sum dish...


...with the Deep-Fried Shrimp Dumplings with Mayonnaise. Fried to a perfect crispness, the briny sweetness of the succulent shrimps come through mellowed by the creamy finish of the mayonnaise.


Just like the previous dim sum dish, the flavors are delicately balanced, draping the palate with an elegant richness.


It's dim sum elevated to a whole new level, modern and innovative yet maintaining traditional flavors. The use of the freshest seafood and ingredients is evident right from the first bite with its subtle sweetness.  


Then, Chef Ken presented the highlight of the special preview with the premium roasted goose. Roasted to a crisp and juicy finish, the bright golden hues of the Hong Kong classic brings authentic and traditional Cantonese flavors to Lung Hin...


...with a recipe perfected by generations of Guangdong chefs. Not many establishments offer authentic roasted goose and it's a unique and special treat just in time for the coming holidays. The tedious roasting, airing and drying process brings both textural contrast and indulgent notes with its crispy skin over a thin layer of flavorful fat and tender, juicy meat with none of the gamey flavors. 


Chef Ken then served his succulent and crisp Hong Kong Golden Roasted Goose, sliced and carved with its own flavorful juices and a sweet plum sauce. Drawing inspiration from traditional recipes from southern China's Guangdong province that's become a Hong Kong classic, Chef Ken's version faithfully recreates all these comforting flavors with his Hong Kong Golden Roasted Goose at Lung Hin.


It's hard to accurately describe the flavors of roasted goose, but there is that distinctive depth of flavor and elegant smooth finish that sets it apart from the usual roast duck. The common roast duck has sharper, bolder flavors while the roasted goose has milder and more nuanced notes. It's a dish perfected by age-old recipes and tradition that's become a Hong Kong classic, and you can experience it at Lung Hin.  


One savory bite leads to another allowing diners to appreciate the lengthy process and long hours in creating the Hong Kong classic. This time, Lung Hin will be roasting this iconic Hong Kong specialty from November all the way to February 3 next year. Chef Ken then served his other dishes from the special menu, including the Poached Garoupa with Wild Mushrooms in Fish Stock with its fresh and clean flavors...



...and the Steamed Stuffed Vegetarian Treasure in Inari Bag, a refreshing pouch filled with vegetables that's both hearty and flavorful. 


But it's the Steamed Japanese Scallops with Minced Garlic in XO Sauce that will have you going for seconds...


...with the briny sweetness from the plump and succulent scallops complemented by the nutty hints of garlic and perfectly finished by the XO sauce. Firm to the bite yet melts in your mouth, these scallops release a burst of vibrant flavors that's both clean and indulgently rich.

One more scallop and steamed vegetarian dumpling followed by a comforting bowl of Braised Fish Lips with Dried Scallops (R) soothes both the palate and body with its briny freshness from the fish and scallops and deep nutty undertones from the mushrooms.


The Signature Lung Hin Fried Rice with Seafood and Scallops rounds out our sumptuous lunch at Lung Hin...
