Conrad Manila kicks off its much anticipated Legendary Chefs Series for the months of June, July and August with three world class master chefs for a stellar culinary calendar highlighting authentic Thai, Chinese and Italian cuisine. In the next three months, Brasserie on 3 hosts three world class and renowned master chefs with Chef Juthakorn "MinkSuraraksa showcasing traditional Thai flavors for the month of June followed by celebrity Chef Jereme Leung of China Blue with his elegant take on Chinese cuisine in July and Chef Valerio Pierantonelli of Conrad Singapore Orchard for classic Italian dishes in August

At the exclusive preview, Conrad Manila General Manager Fabio Berto (R) and Commercial Director Joanna Gomez (L) introduced Chef Juthakorn "MinkSuraraksa to guests for the property's innovative Legendary Chefs Series. "From June 21 to 30, 2023, we want our guests, patrons and food lovers to indulge in a feast of Chef Mink's meticulously crafted dishes, which the Land of Smiles can best offer. This is a one of a kind opportunity to immerse themselves in the luxury of authentic Thai cuisine, right in the heart of Conrad Manila," shared General Manager Fabio Berto


With over fourteen years of experience in the F&B scene, Chef "Mink" has been an integral part of Waldorf Astoria Bangkok's pre-opening team since February 2018. His impressive dossier includes stints in several prestigious hotel properties and his uncompromising approach to traditional Thai flavors makes him the perfect pick to start the Legendary Chefs Series this June at Brasserie on 3.


At the special section showcasing authentic Thai flavors by Chef "Mink" in Brasserie on 3, tasty appetizers of fresh vegetables served with Thai kapi or fermented shrimp paste begins your culinary journey to the Land of Smiles...


...followed by fresh Thai style Spring Rolls served with sweet and spicy chili sauce...


...and an assortment of fresh fruits to open up the palate. 


At the Thai Salad Station, Chef "Mink" teases your palate with an assortment of bold yet clean flavors with the comfortingly familiar Yam Som O or Thai Pomelo Salad and its contrasting play on sweet, sour and mildly spicy notes...


...the refreshing Som Tam or Green Papaya Salad delivering a full range of flavors coming together in a balanced and seamless blend common in Thai cuisine... 


...and the the Yam Mamuang or Green Mango Salad with plump shrimps and distinctive sour and tart flavors. The use of the freshest ingredients and produce makes all the difference in delivering real Thai flavors.


But it's the Yam Nuea Yang or traditional Thai Beef Salad with fork-tender slabs of beef slathered in a rich sweet, salty and sour vinaigrette made with fish sauce along with a medley of fresh vegetables that's high up on my list. The fresh and mildly sharp notes of the vinaigrette cuts through the savory richness from the tender beef for a delicately balanced finish.  


In between bites, enjoy soothing sips of Thai Milk Tea and prepare for another round at the buffet selections of Brasserie on 3. It's just what you need to cleanse the palate from the lingering heat of the fresh chilies and spices. You can also indulge in a wide variety of global cuisine including Japanese, Indian and even Filipino dishes to fix all your cravings in one spot.


Change up the pace with a hearty bowl of soup, like the Kuay Taew Ped Toon or Braised Duck Noodle Soup. The light yet flavorful aromatic broth, fresh vegetables and tender slices of braised duck along with fresh herbs and spices combine for rich and comforting flavors with each sip and bite.


A popular street food staple, Chef "Mink" recreates the classic dish at Brasserie on 3's live station prepared a la minute as you order. At the live station, the station chef can customize a bowl for you mixed with a variety of fresh herbs and toppings for that perfect bowl. 


Soft yet firm and springy egg noodles are added to the bowl completed by a ladle of flavorful steaming hot broth made even richer with garlic, galangal, fish sauce, soy sauce, star anise, cinnamon and a five spice blend topped with juicy and tender slices of braised duck.


Fresh bean sprouts, spring onions and chilies complete the dish...


...with just one sip transporting you to the bustling street market scenes of Bangkok. Throughout the extensive selections at the buffet spread in Brasserie on 3, the use of the freshest ingredients delivers all the flavors for a memorable taste from the Land of Smiles.

Chef Mink features the classic flavors of Northern Thai cuisine, completing the experience with a bowl of Tom Yum Goong or Spicy Prawn Soup with fresh herbs and lime. In true Thai style, the hearty soup is a spicy number smoothened by the briny sweetness of the prawns and zesty hints of lime cutting through the rich medley of flavors in a bowl. 


For the savory main courses, Chef "Mink" lays out a sumptuous spread of authentic Thai classics like the Pla Sam Ross or whole fried fish slathered in a sweet, sour and spicy chili sauce topped with herbs best paired with steamed white rice.


A tasty duo of chicken dishes add to the impressive variety of Thai selections at Brasserie on 3 like the Gaitord or Thai Fried Chicken Wings...


...and Gaiyang or Grilled Thai Chicken with its subtle smoky hints fresh off the grill. Served with a selection of Thai sauces, the fried and grilled chicken offerings are just one of many dishes featured that day. That day, Chef "Mink" served his Gang Keaw Waan Nuea, a rich and creamy curry with tender and melt-in-your-mouth beef cheeks simmered in coconut cream, spices and fiery chilies. The soothing heat from the chilies are tempered by the mildly sweet and thick curry and the savory richness of the buttery beef cheeks. Extra rice? Absolutely. You'll want an extra bowl of steamed white rice with this curry. 


The nutty notes of curry are then followed through with another unique dish from Chef "Mink's" playlist of Thai flavors with the Pla Muk Phad Pong Ka Ree or Stir-Fried Squid with Curry Powder for another must-try dish at Brasserie on 3.   


The Phad Pak Ruam or Assorted Stir-Fried Vegetables is a tasty side to your feast of Thai flavors pairing well with the centerpiece at Brasserie on 3's Carving Station...
