Yokohama in the Metro: Ippudo's New Yokohama Iekei Ramen

Ippudo shares another ramen creation inspired by the regional flavors of Yokohama...


Ippudo recreates the classic Yokohama-style ramen with their new limited edition Yokohama Iekei Ramen, highlighting another regional variation for a new flavor experience.


Located south of Tokyo, Yokohama has its own distinctive regional spin on ramen, adding fresh vegetables like Japanese spinach and cabbage for fresh and clean flavors. And for a limited time, Ippudo offers their take on the classic Yokohama Ramen, the new Yokohama Iekei Ramen (for more on Ippudo, check out my earlier post, Savoring the Ippudo Experience in Every Sip). Just like their previous limited edition ramen (see my posts on their previous limited edition ramen, Turning Up the Heat: Ippudo's Limited Edition Spicy Black and A Perfect Day for Ramen: Ippudo's New Hakata-Style Nikusoba Ramen), the new Yokohama Iekei Ramen (P 495) is yet another flavorful expression of authentic Japanese ramen, masterfully recreated at Ippudo. The new ramen features a unique and flavorful combination of Paitan, a thick white soup made with chicken, and Ippudo's signature pork bone Tonkotsu broth for a creamy richness. Thick noodles, Japanese spinach, cabbage, shoyu tamago, fork-tender pork loin and torched belly chashu complete the unique ramen dish. The richness of the new ramen is immediately experienced right from the very first sip of the steaming broth, but it's a richness that's not sharply overpowering, it's comfortingly soothing.


The mix of Paitan and Tonkotsu broth combine for a flavorful pairing, with its creamy white color bursting with a bold and flavorful richness in every sip. That's double the flavor with each succeeding sip. The torched chashu, with its subtle smoky notes, adds another layer of distinct flavor to the dish. The addition of fresh cabbage and spinach transforms the dish, giving it clean and mildly sweet notes to complement the richness of the broth, capped by the shoyu tamago. Add some freshly crushed garlic and hot chili flakes to bring out even more flavors.
