The constant roll-out of new flavors and variants are part of the brand's dynamic and pioneering nature, blazing new trails in the most indulgent of ice cream expressions with its out-of-the-box creativity. The new Limited Edition Pint Collection by Sebastian's Ice Cream is a reflection of the brand's innovative character that's redefining the local ice cream landscape.

The extensive line-up of the brand's products goes beyond just ice cream, reinventing and transforming ice cream with its unique concepts. The new Limited Edition Pint Collection for 2023 continues the brand's tradition.
Using their flagship store at The Podium as a laboratory and test market, Sebastian's Ice Cream's new Limited Edition Pint Collection consists of the four most popular flavors introduced last year...
...starting with the Leche Flan con Naranja (P 465 per pint) made with an egg-yolk-rich base for one of the brand's smoothest ice cream textures in their extensive line-up. Imagine the traditional leche flan with vibrant hints of oranges in ice cream form, the Leche Flan con Naranja is by far one of the most creative ice cream concepts by Sebastian's Ice Cream.
The lusciously smooth custard base is perfectly tempered by the sharp citrus hints of the candied orange peel for balance while adding a layer of complex notes to an indulgent ice cream experience. The silky smooth and creamy finish of the ice cream drapes the palate with a lingering richness with each bite. It's pure and unrestrained indulgence in the familiar style of Sebastian's Ice Cream. It's this delicately balanced weave of flavor contrasts that makes this ice cream creation truly stand out from the more usual ice cream offerings. And that's no surprise coming from Sebastian's Ice Cream.
Ever since my very first experience with the brand some five years back, I knew then that Sebastian's Ice Cream was bent on pushing the envelope with new breakthrough flavors setting it apart from the more commercial options. With non-traditional flavors like Green Mango & Bagoong, Champorado at Dilis and Sapin-Sapin, Sebastian's Ice Cream isn't your typical ice cream brand (for more on their playfully inventive flavors, see my posts Fast-Forward to Summer with Sebastian's Ice Cream... from 2018 and Closure, Unresolved Issues, Matinong Girlfriend and Matinong Boyfriend: Meet the 2020 Valentine's Collection of Sebastian's Ice Cream from three years ago).
The Cookie Dough Explosion (P 405 per pint) elevates the classic cookie dough experience with their lavish blend of Fior di latte ice cream with unbaked chunks of chocolate chip cookie dough, peanut butter cookie dough and brownie batter in an elegant weave. With three different cookie doughs in one tub, the Cookie Dough Explosion sets the new standard of excellence for cookie dough ice cream.
The lavish flavor was first introduced last year when Sebastian's Ice Cream sold out their regular Cookie Dough flavor. Creating a new variant with Fior di latte milk ice cream resulted in a luxurious take on the usual cookie dough ice cream. With no other flavor added, not even vanilla, the rich milk notes of the Fior di latte comes through while letting you experience the distinct notes of each cookie dough.
Luscious, creamy and delectably chewy with the trio of cookie dough in the mix, the aptly named Cookie Dough Explosion is an elegant version upgrade of the usual cookie dough variant.
Sebastian's Ice Cream draws inspiration from familiar local flavors with the Ube Champorado (P 405 per pint) made with malagkit or sticky glutinous rice simmered in ube milk and folded into yet another novel ice cream creation. It's ice cream like no other you've experienced before.
Known for their distinctive kakanin ice cream, the new Ube Champorado is another creative addition to their line-up of unique champorado-based ice cream flavors like Nutella, Strawberry and Ube. The grainy and velvety smooth texture lets you enjoy the distinctive mouthfeel of champorado, keeping it meticulously soft even when frozen.
The blend of rice and ube combine for a refreshingly new ice cream experience followed by a sweet and nutty finish. And you can bet no one else makes ice cream like this. The use of local produce and ingredients are part of the pillars in the brand's architecture, celebrating local flavors reinvented in creative new expressions of ice cream.
Rounding out the new variants from the 2023 Limited Edition Pint Collection of Sebastian's Ice Cream is the Manggang Mangga (P 405 per pint). It's the brand's attempt at creating, in their words, the best mango ice cream ever. And quite frankly, I think they've succeeded. Fresh mangoes at its flavorful peak of ripeness, a decadent ribbon of mango sorbet and loads of soft and sweet chunks of real mangoes give this new variant bold yet clean flavors of the beloved fruit.
Sebastian's Ice Cream's access to some of the finest local harvest delivers all the flavorful richness in this refined mango ice cream creation. The fresh and clean flavors of mangoes with its tart sweetness punches through with each bite, lingering long on the palate. If you love sweet mangoes bordering on an obsessive level, this one's for you.
As the new year kicks in, Sebastian's Ice Cream takes the lead once more with its untraditional approach to flavors changing the way you view and enjoy ice cream. Widely regarded as the "Willy Wonka" of the local ice cream scene, Sebastian's Ice Cream boldly faces the new year with its repertoire of pure ice cream brilliance reflected in the new Limited Edition Pint Collection for 2023.
