Raided the fridge earlier, and found...nothing. Checked the pantry and yes, something interesting, a yellow tin. La Charra Pate de higado de cerdo Iberico sin aditivos. Quite a mouthful, but this simply means the very best Iberian pork liver without any additives. I see the making of another perfect weekend afternoon.
Made in the province of Salamanca, Angela Garcia Curto has dedicated the past thirty years in making the best Iberian pork liver pate, and you immediately feel this with just one bite.
The pate is an artfully blended masterpiece of Iberian pork liver, bacon, wine, and spices like pepper and nutmeg. Once opened, you see a whitish top layer that turns to a rosy tint as you go deeper, until the light brown liver pate is revealed.
Noticeably sharper than the usual pork liver pate, yet subtle and richer. Great with some thinly sliced toasted baguettes and some wine or beer. Pop on a Cafe del Mar CD and it's another perfect weekend afternoon.
La Charra and other fine Spanish products is imported by Terry Selection, and you can visit their branch at The Podium or call 636-3513.
