That rooster trademark is inspired by the Chinese calendar zodiac sign of the founder, which makes it the proper hot sauce for the Year of the Fire Rooster. The Chinese immigrant and founder arrived in the US aboard the ship named Huy Fong, hence the brand name. To my surprise, Sriracha isn't high up on the Scoville Scale, the international guide on spice levels.
