But it's the inspired dishes of Chef Marco at Anzani Ville Sommet from the Sunday Mediterranean Flair Menu (P 3,500 per person) that neatly ties everything together for a memorable dining experience with his pure, clean and uncluttered renditions of New Mediterranean cuisine masterfully executed with the finest and freshest premium ingredients. Like the Octopus Carpaccio with shaved celery, walnuts, capers and radish finished with a fresh drizzle of lemon dressing. The sweet briny notes of the octopus drapes the palate with a lingering richness complemented by the bright hints of lemon as the rest of the components brings its own medley of textural contrasts and flavors into play. Freshness is flavor, and the Octopus Carpaccio sets the tone for the next courses...


And it's the little touches that transforms your dining experience at Anzani Ville Sommet, like the chilled cutlery for the salad course. 


Back at the open kitchen, Chef Marco adds the finishing touches to the salad course...


...expedited and served with his approval. The Organic Arugula and Shepard Salad in an ornate and delicate Parmesan crisp teases the eyes before the palate. The garden fresh and crisp greens and the bold notes of the Parmesan crisp delivers a delectable play on flavors and textures with the blanched tomatoes, Feta cheese, olives and aged balsamic reduction completing the medley of flavorful richness. Intricate, elegant and bold fresh flavors, Chef Marco doesn't hold back with any of his dishes at Anzani Ville Sommet


The first entrée of Homemade Black Inc Fettucine with succulent Black Selva Shrimps, savory and crunchy bacon and fresh asparagus is both comforting and elegant with each ingredient building layers of flavors. The deep yet delicate notes of squid ink are released with each soft yet firm bite of the homemade fettucine complemented by the supporting cast of fresh ingredients with its unrestrained and fresh flavors. 


For the main course, Chef Marco served his Sous-Vide Beef Tenderloin draped in peppercorn jus with sides of silky smooth mashed potato and glazed carrots. Like butter, the sous-vide technique clearly has done its job with the tenderloin while preserving its beefy richness. 


The pronounced sharpness of the peppercorn jus tempers the savory richness of the beef for an elegantly balanced finish. Diners may also opt for a seafood main course from the Sunday Mediterranean Flair Menu with the Atlantic Salmon Fillet Wellington


Chef Marco paired his courses with fine wine to complete the Mediterranean vibe in rainy Tagaytay. But it was sunny and bright in this spot of the southern dining destination that day. 


For dessert, Chef Marco presented his Anzani Bomb with a decadent trifecta of ice cream flavors on soft vanilla sponge veiled in torched meringue for the picture-perfect sweet ending at Anzani Ville Sommet. The five-course menu is an elegant introduction to Chef Marco's New Mediterranean cuisine, an exciting new entry in the growing roster of chef-driven establishments in Tagaytay. 


A soothing cup of Latte allows you to sit back and take in the vibe at Alfonso's newest restaurant with its exquisite take on inspired Mediterranean cuisine. And Tagaytay's restaurant scene is as vibrant as ever.
