That evening, we sampled some of Straight Up at Seda's specialty tapas meticulously prepared by their culinary team.
Our Tapas Night experience at Straight UP at Seda began with the Pork Rillette (P 330), a traditional cooking method with slow-cooked and fork-tender pork belly served with fresh-baked baguette, mustard and cornichon. Imagine, tender and juicy seasoned pork belly cooked for hours in its own fat and you get the picture. A dab of mustard and cornichon or pickled cucumber brings a subtle sharpness to the palate to cut the savory richness of the pork belly for that balanced finish.
The Shrimp Al Aljillo (P 340) brings comfortingly familiar flavors to your Tapas Night experience at Straight Up at Seda with succulent freshwater shrimps in olive oil infused with roasted garlic and sprinkled with roasted paprika finished with a blend of herb de provence for fresh and clean flavors. Served with slices of crusty baguette to mop up the flavorful sauce of the dish, the play of freshness and flavors comes alive with each bite. Red and green peppers add crunch and just a whisper of sweetness to the dish.
Masterfully executed, the delicate notes of the freshwater shrimps come through followed by the deep nutty notes of roasted garlic. The serving portions are quite generous too, making it a sumptuous meal in itself.
Our Tapas Night experience continues with the Pate de Campagne (P 305), a savory pork paté made with pistachios, nutmeg, cloves and cognac paired with bread and cornichon. The firm and meaty texture of the pork paté gives this dish a savory bite with the delicate notes of the pork complemented by the layers of unique flavors from the pistachios, cloves and nutmeg with the subtle hint of cognac giving it depth. A dab of mustard brings out the flavors of the paté that's just perfect on a slice of baguette.
Meanwhile back at the bar, Straight Up at Seda's culinary team prepares another savory plate of tapas...
...with the Charcuterie Board (P 385 for one), a lavish plate featuring a selection of assorted cured meats and cornichon with slices of crisp baguette and Dijon mustard. The meaty combo of cured meats and Paté de Campagne combine for tasty and savory bites to pair with your cocktail.
The smooth homemade mustard ties everything together with its gentle sharpness. Bold, robust and fresh flavors with every plate, Tapas Night at Straight Up at Seda is one of those culinary gems offering good food, great cocktails and a fantastic view for a unique dining experience.
