What happens when a group of chefs get together? An evening of wine, great food, sinful desserts and even better company. That's exactly what happened at The Wine Club...
Disciples of Escoffier Philippines recently hosted a Wine and Tapas Night at The Wine Club for another impressive gathering of chefs. And yes, the wine flowed all night, at a touch of a button at The Wine Club along with a sumptuous feast prepared by the chefs. The spirit of Escoffier is alive and well, with it's values and vision preserved in another memorable evening.

Philip John Golding hosted the evening of fellowship with members of the culinary association. Almost like a reunion after the long days of the quarantine experience, it was a good time to reconnect. Guided by the principle of the transmission of knowledge, member chefs showcased their own creations for a night of good food and camaraderie (for more on the previous dinners by Disciples of Escoffier, see my posts,

...and young Christopher Ram Caronongan, a young talent and graduate of CCA. The transfer of knowledge, a key principle in the association, is immediately seen that evening with the mentorship of Chef Philip John Golding.
Despite the trademark sashes worn by Disciples of Escoffier members, the evening remained informal in a gathering of friends. Chef Robert Lilja joined Philip John Golding at his station...
...while Chef Victor Barangan served his refreshing Ceviche topped with fish skin crackling for a rich play on textural contrasts.
Chef Philip John Golding then fired up his station...
...for the Lamb Balls (which he dubbed "Lamb Ball Ghini") with his secret sauce made with red curry base and Orzo pasta.
As more members and guests arrived, wine continued to flow along with tasty bites. Members honored the French culinary icon with another gathering around good food and never-empty glasses of wine.
The Irish-inspired Apple Amba, apple tarts with grated apples on a custard base with whipped ganache topped with Swiss Meringue prepared by one its members was also served that evening.
...alongside the lavish Cheesecake with Almond and Granola Crust topped with Dates Compote and Dark Chocolate Truffle by Chef Ram Caronongan.
The diversity and wealth of knowledge from culinary professional gathered that evening made for some interesting discussions...
...while strengthening bonds with a shared vision for the transfer of knowledge to the next generation of chefs espousing the values of August Escoffier.
Another toast, another plate. For the Philippine Delegation of Disciples of Escoffier, the evening marked another chapter in its continued growth...
...with its diversified membership base, all professionals in the food and beverage industry.
Since its creation back in 1954, Disciples of Escoffier dedicated its mission to the culinary arts and transmission of knowledge, upholding the legacy of Auguste Escoffier while maintaining a spirit of innovation. That was shown throughout the evening with every toast and plate.
For Chefs Philip, Vic and Ram, it's another chapter in the continuing story of Auguste Escoffier in the Philippines playing a role and a key part in the global vision of Disciples Escoffier.
And I'm fortunate to be part of it. Congratulations to the Philippine Delegation of Disciples Escoffier, and here's a toast to even more success...
