Lambtastic Quartet of Savory Richness at Souv by Cyma

As Cyma celebrates eighteen flavorful years, Chef Robby Goco's passion and expertise for Greek cuisine and lamb dishes shines ever brighter with a savory quartet of hearty lamb dishes. Have you tried the Lambtastic Festival of Flavors yet?

Roasted, stewed, grilled and fried, Chef Robby Goco presents four savory renditions of premium Australian lamb reflecting his creative culinary style at Souv by Cyma in BGC from the Lambtastic menu. The featured dishes also highlights Cyma's undisputed position as the best Greek restaurant in the metro. Chef Robby Goco's pioneering efforts and commitment to quality recently earned him the prestigious recognition from Meat and Livestock Australia as the country's first "Lambassador" for his exquisite lamb dishes (for more on the Chef Robby Goco's appointment as Lambassador and the launch of the Lambtastic Menu, see my earlier post Lambtastic: Meat and Livestock Australia Appoints Chef Robby Goco as the First "Lambassador" for the Philippines from April this year). Read on for the savory quartet of lamb dishes by Chef Robby Goco...

First up, the 8-Hour Roast Lamb Shoulder laid on Greek fries with lemon and oregano. Tediously slow roasted for eight hours, the fork-tender lamb shoulder just falls off the bone and melts in your mouth like butter draping the palate with a savory richness. Using only the finest Australian lamb, the flavors are bold yet clean and fresh. Herbs and spices complete the medley of savory notes pairing perfectly with the crisp Greek fries.

The Country-Style Fried Lamb offers a comforting and delectable play on crunchy textural contrasts with deep savory flavors. Drawing inspiration from the classic country fried steak, Chef Robby reinvents the comforting staple using lamb chops instead of the usual beefsteak. Premium quality lamb offers a richer and flavorful depth for a refreshing alternative to your country fried steak cravings. Breaded and deep-fried, the Country-Style Fried Lamb topped with fresh herbs is a unique reinterpretation of a traditional all-time favorite perfectly executed at Souv by Cyma. A fresh squeeze of lemon just seals and completes the flavors.

Each order from the Lambtastic menu comes with a side for a satisfying meal in itself. Take your pick from Brown Rice Pilaf and the Marouli or shredded Greek Spring Salad...

That day, my picks included the Horiatiki Greek Village Salad with tart tomatoes, fresh cucumber, red onion, Kalamata olives, capers and bell pepper generously topped with Feta cheese...

...and the Briam or Greek Roasted Vegetable Stew with potatoes, tomatoes, carrots and eggplant simmered in a tomato-based sauce topped with Feta cheese and fresh herbs.

For the third dish from the Lambtastic menu, the Paidakia Lamb Ribs Verjus is a creative variation from Chef Robby's popular bestseller. Glazed with a mildly sharp and acidic vinegar made with unripe grapes, the Paidakia Lamb Ribs Verjus brings perfectly balanced bold and savory notes with each bite. The verjus is the secret ingredient of the dish, tempering the savory richness of lamb ribs. And yes, go ahead and use your fingers for the best way to enjoy ribs.

The hearty Low and Slow Lamb Stew rounds up the flavorful quartet from the Lambtastic menu at Souv by Cyma. The Greek style stifado with grape molasses or petimezi, carrots and whole shallots topped with fresh parsley and sumac onions just warms the palate with all the flavors coming seamlessly together with each spoonful. It's a full meal, pairing well with the Brown Rice Pilaf or crusty bread. The four dishes presents Chef Robby's mastery of lamb in the long and enduring story of his chain of restaurants anchored by the flagship Cyma Greek Restaurant now celebrating eighteen flavorful years. When you're thinking lamb for lunch or dinner, drop by Souv by Cyma and take your pick from the fab four lamb dishes created by "Lambassador" Chef Robby Goco
