What's in the Fridge...Eggplant Kimchi

Heard the doorbell yesterday and it was my friendly neighbor with yet another delicious Kimchi dish...eggplant kimchi (Gaji Namul). 


Loaded with garlic, chilies, and green onions, it's a perfect side dish that really goes well with fried fish or anything fried.  




Here's to a great meal, and great neighbors....

    2. same here, wished my neighbors could give yummy treats, too. honestly, i never had kimchi in my whole 42 yrs of life :) but, seeing the preparation, i would want a try-out :)
