Pair your ice-cold Kirin Beer with even more savory bites like the Ro-Su Charsiu (L) with fork-tender slices of delicately roasted pork topped with fresh leeks and watercress drizzled with an indulgently rich butter sauce and the Aburi Niku (R), tender pork cubes torched for that sweet caramelized crust slathered with onion sauce.


The signature tonkotsu broth at Tsuta is made with loads of premium black pork bones and trotters simmered for hours resulting in that distinctly creamy, collagen-rich broth with its smooth and silky mouth feel and texture. Tsuta's broth or dashi is a delicate blend of various oils and sauces delivering the multi-layered umami flavor Tsuta is known for, the perfect base for their handmade noodles and pork. The Tonkotsu Soba (P 390) is Chef Yuki's own version of a classic made richer with a creamy collagen-rich broth. One sip, and the deep notes of the broth drapes the palate with layers of umami richness. The end result of black pork bones and trotters boiled at high temperatures for hours is a milky broth that perfectly complements the soft yet chewy soba noodles and savory pork charsiu. The addition of Hokkaido sea kelp and shiitake mushrooms enrich the broth with even more umami flavors. All-natural ingredients without the use of any artificial enhancers like MSG makes each bowl deliver real flavors.
