One of my personal picks at Kusina Sea Kitchens with its authentic renditions of Indian cuisine, Little India immediately takes you to the famed sub-continent with its pure and unrestrained approach to flavors. 


From tasty nibbles with crisp Samosas paired with a variety of dips and sauces...


...to savory mains like the iconic Chicken Tandoori...


...and light delicate notes of the Fish Tandoori, Little India tempts your palate with its masterful blend of spices. 


Every journey has its own share memorable discoveries, and that evening at Kusina Sea Kitchens I discovered my new favorite Indian dish with the Keema Aloo or gently simmered spicy ground lamb and potato in tomato-juiced based sauce. The savory richness of the ground lamb are perfectly tempered by the soothing heat of the chilies and tartness of the sauce for that perfect balance and finish.

Then, there's the day's freshest catch to complete your feast of local flavors...

One of the stand-out dishes at the Kusina Station is the Pork Sisig with red onions, fresh chilies and egg on a sizzling hot cast iron plate. The ubiquitous sisig isn't entirely about the crunch, it's about textural contrasts from the soft and mildly chewy yet melt-in-your-mouth collagen rich pork mask, cheeks and ears combining with the seared edges for that delectable play on textures. The flavors are deep and unctuous draping the palate with its lingering savory richness with the egg making it even more decadent. The fiery chilies and vibrant notes from the calamansi tempers the savory richness of the pork for that clean and delicately balanced finish. Extra rice? Sounds about right. 


Sixth Station: Smokehaus

Kissed by the flames and romanced and caressed with smoke, the impressive smoked selections at Smokehaus takes you back on the road for the next part of your culinary journey at Kusina Sea Kitchens
