Your memorable experience at The Peak begins at the lobby level where you are escorted to a special elevator leading you all the way up to the sixtieth floor where you are greeted by the staff and directed to your table. As you step out of the elevator, the semi-open kitchen becomes the first visual cue to your evening's memorable feast.


And this is where the magic happens, as the culinary teams of chefs at The Peak begin their nightly performance...


...highlighted by their specialty creations fresh off the fiery charcoal grills. The A La Carte selections at The Peak feature some of the world's coveted premium ingredients, but you can also opt for the Signature Menu (P 4,100 per person/P 7,880 for two) for a virtual snapshot and much wider range of their extensive repertoire of offerings. 


Your first course from the Signature Menu is the Italian Burrata with spiced tomato sugo and fresh basil, setting the tone with its fresh and vibrant notes to open up the palate. The decadent creamy richness of the luscious cow's milk cheese are delicately tempered by the fresh tartness of the tomatoes for that elegantly balanced finish. 


The indulgent notes continue with the Charred Corn Soup made even richer with black truffle and sour cream. The subtle sweetness and just a whisper of smoky hints are complemented by the deep earthy and nutty notes of the black truffle smoothened by the sour cream. The play on flavors are both deliberate yet delicate, with even more to come...


The Oven Roasted Patagonian Toothfish with raisin and almond mole was for me the unexpected surprise of the evening's feast. Soft and buttery fish draped in a rich mole, each bite becomes a flavorful and textural experience...


...from the near melt-in-your-mouth and silky smooth Patagonian Toothfish draping the palate with its lingering richness and the creamy yet delectable sharpness of the raisin and almond mole with hints of balsamic for contrast. Delicate yet unrestrained flavors marks the third course with the intricately plated Patagonian Toothfish... 


...and as you enjoy the last few bites, the kitchen prepares the next course on the charcoal grill. 


The Grilled Australian Grass Fed Tenderloin with red onion jam, king oyster mushroom, foie gras and red wine jus is then served, masterfully finished on the charcoal grill. Grilled to medium rare with a juicy pink center, the featured main beef course from the Signature Menu is the obvious highlight of the evening's feast. And deservedly so. 


Each slice and bite delivers fresh and clean yet rich, beefy and savory notes with subtle smoky hints from the grill to complete the flavors. But it's the supporting cast on the plate that adds even more layers of flavors with each bite with the red onion jam, red wine jus and foie gras casting its own distinct notes for a savory medley by The Peak.
