The raging cheesecake wars continues with the latest Limited Edition Burnt Basque Coffee and Cacao Cheesecake from El Born La Pastisseria. For Chef David Amoros in collaboration with acclaimed Pastry Chef Nicolas Vernole, the latest creation is an homage to artisan local produce sourced from high up north to deep down south in the country infused with espresso from Yardstick Coffee made with beans from Benguet and local tablea from Davao by Cacao Culture. The new Limited Edition Burnt Basque Coffee and Cacao Cheesecake by El Born La Pastisseria is a story of seemingly random serendipitous moments linked together by collaboration in celebration of Filipino farmers and local artisan produce. "I've been thinking of paying tribute to the small farmers and producers of this country for a while, so I started researching how to make a cheesecake using only sustainable produce and one that can use as many products from this country as possible," explained Chef David Amoros.
