Five elegant expressions of sake paired with the sumptuous cuisine from Bondi & Bourke and good company, that's all the key elements for another memorable evening hosted by Disciples of Escoffier...


In the spirit of Escoffier, the transfer of knowledge among industry peers and fostering camaraderie among members were celebrated one evening with Umami Marriage Night by Disciples of Escoffier with the premium selection of Sake Clan paired with the elegant and hearty cuisine at Bondi & Bourke. The ritual of sake is an indispensable element of Japanese culture, history and identity linked with traditional ceremonies as well as strengthening social bonds. At the exclusive private function area of Bondi & Bourke, some of the finest sake from Japan takes centerstage for one evening of good food and good times. Sake Clan, the country's premium sake specialists, showcased five classic expressions of Japan's national alcoholic spirit made from rice in one of the regularly scheduled activities of Disciples of Escoffier.

The evening's starters featured a slice of Paté en Croûte with Prosciutto paired with the selection of sake from Sake Clan...

With each serving of sake, engaging conversations are kicked up a notch as guests enjoyed their pairings.


The sake experience began with the featured aperitif, the Tsuru Ume "Sour Plum," a refreshing and traditional Japanese liqueur made with the ume fruit. Each sip soothes the palate with its delicate sweetness, opening it up for the savory courses served that evening.


The Zaku "Graceful Wisdom" Junmai Daiginjo brings a light, dry and subtle crispness to the palate releasing fruity hints... 
 

...while the KID "White Label" Junmai delivers medium-bodied semi-dry finish with each sip followed by gentle hints of pear, melon with just a whisper of citrus notes. Elegantly smooth and light on the palate, the sake expression is a reflection of the wide and diverse range of flavors of traditional sake

Hakurakusei "Flower of BreweryJunmai Ginjo is a food-friendly sake expression with its temptingly fragrant aroma, rich and vibrant citrus notes with hints of sweet bananas and smooth finish pairing well with a variety of savory dishes. 


The Shichihon Yari "Wataribune" Junmai pairs well with heavier dishes with its deep, mildly earthy notes...


...holding up quite well with the bold and refreshingly tart flavors of a classic pasta dish at Bondi & Bourke


Widely known for their specialty steaks, no dining experience at Bondi & Bourke is complete without a fork-tender slab of premium beef for dinner. The Roasted Striploin with Hasselback Potatoes and French Beans is perfectly grilled to medium rare with a juicy pink center draping the palate with its savory richness. The sake just cuts through and tempers the rich and unctuous notes and you're ready for another bite. And sip. 


For dessert, Bondi & Bourke served the indulgent Ube Créme Brûlée with mango and coconut...
