Anzani X Sau: An Italian Style Brunch at Cafe Fleur

The fragrant aroma of Roast Leg of Lamb and Porchetta fill the air, teasing your senses. It's time for brunch at Cafe Fleur...

Chefs Sau del Rosario and Marco Anzani recently collaborated for an Italian Style Brunch at Cafe Fleur following the success of the lavish Degustation Dinner paired with Italian wine at One World Kitchen the night before. From fresh oysters to charcuterie and cheeses, savory roasts, comforting pizza and sumptuous pasta dishes to desserts with Prosecco, the Italian Style Brunch by Chefs Sau del Rosario and Marco Anzani at Cafe Fleur was one brunch to remember...

One of Poblacion's hidden gems leading the charge in the eclectic neighborhood's culinary revival, Cafe Fleur showcases the classic yet modern creations of one of the country's top chefs in a casual yet elegant setting. One Sunday morning, Chefs Sau del Rosario and Marco Anzani team up for a hearty Italian style brunch pulling all the stops for a memorable dining exerience.

For Chef Sau del Rosario, the Italian Style Sunday Brunch at Cafe Fleur is a reflection of his constant pursuit for innovation and creativity. Despite opening just a few days from the start of the global pandemic, Cafe Fleur has established itself as one of Poblacion's favorite dining destinations. Combining traditional local flavors with modern culinary techniques, Chef Sau's progressive take on Filipino cuisine offers refreshing new flavor experiences at Cafe Fleur.

And that's just the beginning as Chef Sau del Rosario will soon unveil yet another concept, Sawsaw, this month (for more on Chef Sau del Rosario, see my earlier posts, Moments at Cafe Fleur with Bottarga Pasta and Vuco Fye by Chef Sau del Rosario on his classic menu and his own indulgent spin on the popular buko pie, An Afternoon with Chef Sau del Rosario at Cafe Fleur featuring his new dishes, Dining in the Next Normal: Move Over Banana Bread and Make Way for Chef Sau del Rosario's Indulgent Vananah Walnut Tsokolateh Vread on his novel fresh-baked specialties, Flavors of Pampanga: Farm-to-Table Dining at Chef Sau del Rosario's 25 Seeds on his restaurant in Angeles City, Flavors of Pampanga: Samsaman, A Capampangan Boodle Fight with Chef Sau del Rosaro at 25 Seeds on his seasonal offerings, Local Flavors Shine at Diamond Hotel's Filipino Culinary Pride featuring Chef Sau del Rosario and Flavors of Pampanga: The Kanyaman Filipino Food Festival by Chef Sau del Rosario at Novotel Manila's Food Exchange on his successful guest collaboration with Novotel Manila).

Chef Sau del Rosario is joined by one of Cebu's noted chefs for the second day of an epic two-day collaboration with Marco Anzani of Anzani Cebu for an Italian Style Brunch at Cafe Fleur. Widely regarded as one of the best restaurants in Cebu, Chef Marco Anzani brings his own culinary style based on "New Mediterranean Cuisine" to Manila. And when two of the very best chefs come together, you can be sure this leisurely Sunday brunch will be one to remember.

Outside, Chef Bong Sagmit tends to the savory Leg of Lamb roasting on the streetside charcoal pit...

...teasing your appetite with its fragrant aroma. Maybe Robert Duvall got it wrong, but Roast Leg of Lamb is way better than napalm in the morning.

Inside, the chefs of Cafe Fleur fired up the kitchens with their A La Minute Station serving freshly prepared  omelets just the way you like it with a variety of fillings beside the Cheese and Charcuterie Station with its lavish selection of Coppa, Pepperoni, Salami, Tallegio, Bel Paese and Gorgonzola.

Start your brunch with a comforting and freshly brewed cup of Cafe Latte...

...and you're just about ready for a leisurely brunch, Italian Style, at Cafe Fleur. A plate of fork-tender and savory Roast Leg of Lamb with a side of roasted potatoes brings a flavorful richness followed by subtle smoky hints to the palate. Each juicy bite releases even more flavors, capped by the special sauce. And yes, you can have more...

The equally juicy Porchetta topped with fresh herbs with a side of chimichurri offers even more savory flavors to your brunch experience at Cafe Fleur. Perfectly roasted, the tender pork with a light and delicately crisp of layer crackling delivers a burst of savory richness with each bite.

One more slab of Porchetta satisfies your palate, and your soft and fluffy Omelet is served just the way like it for that perfect brunch experience.

It won't be an Italian style brunch without Pizza, and diners can enjoy a selection of pizza fresh off the ovens...

...with the rustic Margherita, creamy Four-Cheese and savory Pepperoni. The charred blistered crust and generous toppings combine for a savory punch leaving you wanting more. And yes, you can have slices of all three variants.

What's brunch without oysters? That day, plate after plate of freshly shucked oysters were served with a side of spiced vinegar and lemon wedge paired with a refreshingly crisp glass of Prosecco. Now that's brunch, right?

As more guests arrived, the streetside charcoal pit at Cafe Fleur remained busy...

...along with the ovens churning out even more slabs of crisp and juicy Porchetta

And the Prosecco flowed non-stop that morning at Cafe Fleur...

Then, there's the Fresh Pasta courses to complete your Italian Style brunch feast at Cafe Fleur with Beef Ragout, Pesto...

...and Mushroom Cream to complete your brunch experience. The handmade noodles are soft yet firm to the bite for that perfect al dente finish, with each of the options offering uniquely different flavors from the savory and beefy Ragout, the refreshing Pesto and the silky smooth finish of the nutty Mushroom Cream. Go ahead and try all three.

Brunch is the best way to enjoy a sumptuous feast at your leisurely pace. For dessert, have some Tiramisu or French Toast served with fresh strawberries for that sweet ending at Cafe Fleur
