The final edition of the monthly gathering at the CCA Show Kitchen served as a memorable homecoming for one Filipino chef making waves in Melbourne...
The monthly gathering of culinary professionals hosted by CCA Manila Culinary Director Philip John Golding at the CCA Show Kitchen in BGC is an opportunity to strengthen alliances and establish meaningful connections in the F&B community. Since August, the monthly mixers forged new connections, renewed with each edition at the CCA Show Kitchen. For the final mixer, the CCA Show Kitchen hosted the much awaited homecoming of Australia-based Chef Migo Razon to cap the year on a high note.

In one memorable evening, Chef Migo Razon presented his signature dish at the final monthly mixer for the year. Currently the Executive Chef of Miss Me Melbourne at Melbourne Mövenpick, Chef Migo Razon is a proud DCATM Batch 2004 Alumnus from the long roster of successful CCA Manila graduates. In a full circle moment, Chef Migo Razon gives back to the institution that trained him sharing skills and knowledge to CCA Manila Levels 8 and 6 DCATM students Jamille Fernandez and Denise Fetesio.
Meanwhile, CCA Manila Culinary Director and host Chef Philip John Golding and Chef Aaron Lau of Booya Bagels and EAPPOC Pizza prepare their own culinary magic in the rows of impressive work stations at the CCA Show Kitchen with the freshest harvest from Future Fresh...
...expressed and transformed into sumptuous meals...
...complemented by the D-I-Y Salad Station, now a staple in all CCA Show Kitchen Monthly Mixers. Good food, after all starts with the freshest and finest ingredients.
But the stage belonged to Chef Migo Razon that evening as he described each component and the tedious process behind his popular dish at Mövenpick Melbourne revealing secret ingredients...
...like these Baby Cucumbers with its refreshing sweetness and crisp finish almost like green grapes. It was my first time to try this, thanks to Chef Migo Razon. Persian Cucumbers, Lebanese Cucumbers, Cocktail Cucumbers, Gherkins or Mini Cucumbers, the small and petite bite-sized version of the larger cucumber comes in many names packing both sweetness and crunch in one bite. Normally ranging between three to five inches long, Chef Migo Razon's fresh harvest were similar in size to large peanuts. Popular in Australia's high-end restaurants, Baby Cucumbers are a versatile ingredient that can be used in a variety of creative culinary renditions with its small size, delectable succulent crispness and tart sweetness.
Assisted by CCA Manila students, Chef Migo Razon then demonstrated his elaborate salad dish from the Small Shares Menu of Miss Me Melbourne...
...with cucumber, honey dew, apple, sunflower seed cream, and achaar or tangy and pungent Indian style pickles. Chef Migo Razon masterfully orchestrates all the elements with its unique and contrasting notes in an elegant and exquisitely rendered expression of pure and fresh flavors.
