Doing Danish at St. Marc Cafe

The soft, flaky and delicately layered and laminated pastry is known the world over as the Danish. But in Denmark, it's known locally as the wienerbrod or Viennese Bread tracing its origins to Austrian bakers who introduced the sweet pastry in Copenhagen back in 1850. A widespread strike by Danish bakers forced bakery owners to bring in Austrian bakers to fill in the gap. And these Austrian bakers brought their own baking traditions and specialties like the Plundergeback which soon became popular in Copenhagen. After the strike, Danish bakeries continued these Austrian specialties evolving into different varieties of what we now call the Danish (calling it the Austrian instead of Danish, though they introduced it to the Danes, just doesn't sound right without the "ish"). When Danish immigrants brought their wienerbrod to America, the popularity of the Danish was firmly established.

There are numerous styles and variations the world over, but one bite always ends with the same result. You'll want another. St. Mark Cafe adds its own intricate style to the Danish, weaving it with an indulgent spin just like their signature Chococro.
