The culinary themes at Spectrum in Fairmont Makati are regularly changed every Monday, focusing on a specific cuisine to complement the extensive buffet spread. My very first experience of the Themed Nights at Spectrum featured Korean cuisine in its regular cycle, and it was definitely something to look forward to at Fairmont Makati Hotel. This also marked my return to Spectrum after its recent reopening. 


On the buffet spread that evening, Executive Chef Bela Rieck and his culinary team showcased a wide array of authentic Korean dishes for the scheduled cycle of Themed Nights at Spectrum...


...with many of the popular and familiar staples we've loved through the years. Pick up a plate and begin your journey to Korean flavors...


First thing on the agenda, grab a bowl of the Bokkeumbap. A Korean style fried rice with seafood, sesame and soy sauce topped with egg kicks off your culinary journey to the Land of the Morning Calm. 


The complex yet comforting blend of flavors teases the palate, with the bold notes smoothened by the egg. That's the perfect start to your Themed Nights experience of Korean flavors at Spectrum


Extra rice? The Kimchi Fried Rice also hits the spot at the Themed Nights in Spectrum. Now, for the mains...


The Dwaeji Galbi or marinated pork ribs deliver bold savory notes with hints of subtle smokiness and sweetness pairing well with the Kimchi Fried Rice...


...while the popular L.A. Galbi or grilled marinated beef is another must-try at the buffet spread. Named after the "lateral cut" of the beef across the bone, the L.A. Galbi is both juicy and tender with the savory richness of the beef complemented by the mild sweetness of the marinade. 


Next, enjoy a slice of Haemul Pajeon or scallion pancakes with egg, shellfish, crab and sesame...


...or the Yachaejeon or vegetable pancake with its fresh and clean flavors in contrast with the succulent briny sweetness of the Haemul Pajeon with seafood. 


The Haemul Bokkeum or stir-fried seafood loaded with the fresh and succulent catch of the day is a hearty dish that warms and lines the palate with a lingering briny sweetness and rich blend of spices. 


Everyone loves noods and the Korean Japchae is another almost mandatory dish to bring to your table at Spectrum. Soft, springy noodles infused with the rich savory notes of the different ingredients deliver flavorful bursts with each bite. 


The classic Bulgogi or marinated beef finished on a fiery hot grill delivers full-on flavors, and a second serving is a natural result after the first few bites. 


If you prefer pork, the Jeyuk Bokkeum or spicy stir-fried marinated pork is a great option. Savory and spicy with a subtle sweet finish, the pork dish is a welcome addition to your Korean feast at Spectrum. The wide selection of dishes at Spectrum is a real treat for fans of Korean food but there's more on the buffet spread featuring international cuisine...

Korean dishes alongside international and local cuisine, the Themed Nights at Spectrum offers diners a world of flavors to satisfy any craving.  Spectrum offers Breakfast, Lunch and Dinner daily priced at P 1,450 net, P 2,700 net and P 3,000 net respectively. 

The Weekend Buffet with a much wider and extensive spread and live music entertainment is priced at P 3,600 net for Dinner every Friday and Saturday, and P 3,800 net for Sunday Lunch featuring Sabroso Lechon and various charcuterie.
