The classic local staple of sinigang is given that indulgent Mamou touch with the Kurobuta Sinigang (P 685), a hearty sour pork soup with slabs of tender Kurobuta or Japanese black pig stewed and simmered for hours in a tamarind broth topped with a variety of country vegetables. 


The fresh and bold sourness of the thick tamarind broth is clearly a leveled up version of the traditional local dish with premium Kurobuta pork adding a distinctive layer of nutty savory sweetness to Mamou's version of sinigang.
