I first fell in love with Diniwid Beach six years ago, and it's still the spot to reconnect with that unique and captivating island vibe Boracay is known for. Clarity. Sarah LaBrooy, one of the owners of DiniBeach Bar & Restaurant was our gracious host for the evening. Born in Australia and raised in Dallas, Texas, Sarah LaBrooy is a true global citizen who lived in different parts of the world before settling in Boracay. With decades of experience in the F&B and hospitality industry, Sara LaBrooy is known for her award-winning restaurant in the island, The Lemon Cafe. At DiniBeach Bar & Restaurant, Sarah brings both her expertise gained from years of experience as well as her own elegant style to the casual and laid-back beachfront bar and restaurant. One of the island's many pioneering and trailblazing personalities, Sarah LaBrooy made the island her home adding to the colorful layers and stories of Boracay.


At the bar, a selection of refreshing libations were prepared for the daily sunset ritual...


...including their signature Frozen Hibiscus Margarita (P 300) with tequila, triple sec, hibiscus syrup and lemon; Hibiscus Sour (P 300) with vodka, hibiscus, Prosecco and fresh lemon; Sarah's Margarita (P 300) and Aperol Spritz (P 300 and my personal pick for the sunset)...


...followed by tasty bites fresh from the kitchen. DiniBeach Bar & Restaurant offers a full menu from breakfast, appetizers and bar chow, garden-fresh salads, sandwiches and paninis, pasta and rice dishes to hearty and savory mains and desserts.


That day, we sampled their selection of savory appetizers to pair with our cocktails...


...like the Pulled Pork Tacos with tender and juicy strips of pork and fresh greens on soft flour tortillas...


...and their version of crisp Nachos (P 270) with fried pita, ground beef and tomato salsa draped in homemade cheese sauce for a Mexican inspired start to our sunset session of libations and tasty bites. The flavors are clean and fresh, with the subtle sweetness of the pulled pork leaving a lingering savory richness on the palate while the nachos with its contrasting textures will have you going for another piece.


The play on local flavors becomes a unique and creative fusion of fresh notes with the Kinilaw on Fried Pita (P 250). The pronounced tartness of the vinaigrette is smoothened by the briny sweetness of the day's freshest catch rounded out by the crunch of the fried pita. A second round of cocktails? Absolutely.


Easy and smooth, the soothing Pandan Bliss (P 250) with its blend of Bacardi, fragrant pandan, honey, ginger syrup and pineapple brings bright notes to the palate with a subtle sweetness. Be sure to try their other signature cocktails like the Buch N' Hooch (P 290) with gin, home-brewed kombucha, basil, lime and soda; the DiniBeach Mai Tai (P 250) with Bacardi, Captain Morgan's Rum, Grand Marnier, lemon juice and orgeat and the Mango Passion Mojito (P 300) with Bacardi, mango, passionfruit, lime, mint and soda.    


Another must-try starter at DiniBeach Bar & Restaurant is the Skagen, a Scandinavian-inspired dish with shrimps slathered in a creamy mayo dressing on a delicately crisp slice of toast. The silky smooth dressing adds a luscious indulgence with each bite, followed by the natural sweetness of the seafood. 


The shifting light from the setting sun transforms Diniwid Beach, and the warm glow from the beachfront bar's lights reveals yet another facet of DiniBeach Bar & Restaurant. The sun's final bow presents an evening of infinite possibilities. And cravings for some serious bites like the Cheeseburger Sliders (P 440) served with thick hand-cut fries.


These bite-sized sliders deliver solid flavors from the juicy beef patty to the crisp greens and creamy cheese conspiring for a savory finish. But save room for dessert...


From the traditional Carrot Cake (P 250) crowned with whipped cream...


...the Lemon Bar (P 150) with its tart sweetness...


...to the classic Chocolate Lava Cake (P 250) with its moist and dense texture made even richer with its decadent chocolate filling, DiniBeach Bar & Restaurant completes your sunset sesh. 


A sunset may signal the end of the day, but not in Diniwid Beach. It's a celebration with so much more ahead as the lingering glow sets up the tone for the evening. 


My fascination with Diniwid Beach continues, with each sunset more spectacular than the last. Here, time stops and you'll find that much needed clarity away from the clutter and usual crowds making it the perfect spot to catch the sunset.
