Hilton Manila General Manager John Lucas welcomed guests at the exclusive thanksgiving and preview dinner of seasonal offerings to end the year on a high note. High up on the list of Hilton Manila's holiday offerings are the extensive selections at Kusina Sea Kitchens...
...but first, some libations to get you in the proper spirits. How about a round of Merry Cocktails (P 500++ per cocktail) from the Port Bar and Freestyle Pool Bar to start? The trifecta of soothing cocktails with vodka, gin or rum as the base sets the tone for the Yuletide festivities at Hilton Manila before a lavish feast at Kusina Sea Kitchens. The Grinch on the far left is aptly named with its naughty blend of rum, melon liqueur, lemon juice, pineapple juice and Maraschino cherry while the bright blue Jack Froze in the middle is guaranteed to set you on chill mode with vodka, Triple Sec, Blue CuraƧao and lime syrup.
The Kris Kringle is my pick with its blend of gin, Smirnoff Mule and elderflower garnished with a fresh sprig of rosemary. The notes are comfortingly familiar and even nostalgic with that sweet and tart finish for balance while packing a festive yet solid punch. One more round before your buffet dinner? Yes, please.
Inside Kusina Sea Kitchens, you'll spot the red chair reserved for the main man himself. Start telling the kids to behave and be good 'cause Santa knows everything...
One of my favorite stations at Kusina Sea Kitchens has to be the Filipino Station with its lavish array of comforting local dishes. Even the look and feel of the station has this nostalgic vibe setting up your appetite with its all-time hits...
...like the crisp and crunchy Chicharon Bulaklak paired with a spicy vinegar dip. One bite and it's game over. Guaranteed. So grab another plate...
And you can't say no to Pork Sisig too. The proper sisig isn't one-dimensional with its singular crunchy finish but a layered mix of both crunchy and soft yet firm and mildly chewy pork. And this rendition hits all the right notes with just a whisper of soothing heat from the fresh chilies and vibrant citrusy hints to temper the savory richness.
And there's more. Before scooping up that extra serving of rice make sure there's enough space on the plate for the classic Pork Embutido...
...and the timeless Pancit Bihon that just takes you back to countless carefree childhood summers.
And the best part of the Filipino Station has to be its impressive selection of local vinegar from all around the country. That calls for another plate of Chicharon Bulaklak.
After comforting local flavors, hit up some authentic Indian cuisine at the Indian Station...
...with savory specialties like the juicy Lamb Seekh Kebab fresh off the traditional tandoor oven. You'll find a variety of Indian dishes and the selection that day included Rajma Masala with kidney beans cooked in tomatoes and spices, Aloo Gobi Matar or spiced curry and the popular Chicken Tandoori.
Right beside the Indian Station is the Asian Station showcasing iconic flavors...
...like the Wok-Tossed Chili Crab...
...the Honey Walnut Shrimps with its fresh and clean notes...
...the succulent Mussels Cooked Asian Style...
...and plump Clams with Glass Noodles. A Noodle Station is located right beside the Asian Station for that customized bowl of comforting goodness prepared a la minute just the way you like it and served to your table.
But if you really love seafood in its purest form, the Japanese Station is a mandatory stop on your global tour of flavors at Kusina Sea Kitchens. From fresh sashimi and hand-rolled sushi, tempura and more, grab another plate and load up.
It's not a festive holiday feast without a savory roast, right? At the Smokehaus/Western Station, the culinary team of Kusina Sea Kitchens pulls all the stops with its impressive repertoire of offerings ready for carving...
...led by the fork-tender Herb-Roasted US Prime Rib paired with baked potatoes, assorted grilled vegetables and the traditional red wine jus or mushroom gravy. But the chefs at Kusina Sea Kitchens get creative infusing local notes with the Kare-Kare and Adobo gravy for that novel mash-up of festive flavors.
Then, there's the tender Honey Leg of Ham sweetened with pineapple for another festive take on traditional holiday staples...
...along with another mandatory dish to complete the flavors of the holidays with the Roasted Pork Belly Roll. Imagine fork-tender and juicy pork capped by a delicately crisp layer of crackling. This one gets a whole plate all to itself. And extra crackling too.
And finally, the Brine Roasted Turkey with all the stuffing, sides and gravy. Perfectly roasted, the meat is tender and moist releasing delicate flavors draping the palate with its elegant richness like a comforting hug. The Christmas Eve Dinner Buffet and Christmas Day Buffet (both priced at P 3,500++) are perfect for family gatherings. The Christmas Day Buffet includes a whole native Lechon, Curacha or slipper lobsters, selected free-flowing beverages plus a visit from Santa.
From December 26 to 30, the Christmas Feast Buffet will showcase the cultural and culinary heritage of Bacolod with its colorful Masskara Festival theme for Lunch (P 2,800++) and Dinner (P 3,000++).
Kusina Sea Kitchens will also host a lavish buffet feast to welcome 2025 with the New Year's Eve Dinner Buffet (P 3,000++) featuring Ichiban sashimi selections and lechon carving along with Herb-Roasted US Prime Rib.
