Guevarra's by Chef Laudico Hosts Melbourne's Adobros for the Latest Edition of Taste of the Philippines

This May, Guevarra's by Chef Laudico presents the flavorful stories of Adobros from Melbourne for its continuing series dubbed Taste of the Philippines. Take a deep dive back into our culinary roots at Guevarra's by Chef Laudico...


I've always been fascinated at how comforting local flavors are recreated and even reimagined from a foreign perspective, and it's always heartwarming to see how we are all reconnected to the cuisine that shaped who we are defining our identity. Filipinos abroad offer a fresh take on classic local cuisine, reinforcing the flavors that bind us. The third in a series, Guevarra's by Chef Laudico becomes the stage once more for a global culinary journey of inspired Filipino flavors as interpreted by Melbourne-based Chefs Michael Pastrana and Morris Danzen Catanghal better known as Adobros for another eye-opening and palate pleasing taste of tradition with their creative renditions. 


More than just a series of collaborations, the novel series offers a glimpse of familiar flavors from a global viewpoint. Slowly but surely, Filipino cuisine is making its mark around the world championed by chefs whose roots trace back to the Philippines. Immersed in a multi-cultural context, a new generation of Filipinos abroad brings their own global spin inspired by their own journey and memories to the kitchen. And to the global table. The Taste of the Philippines series by Guevarra's is a novel attempt to capture this movement of innovators. Restaurateur and partner Kelvin Yu said it best when he proudly proclaimed that "the world comes to Guevarra's" with the masterfully executed renditions by guest chefs from around the world with the on-going Taste of the Philippines series.


Long-time and passionate advocates of Filipino cuisine, Chefs Lau and Jac Laudico offers diners and guests the opportunity to rediscover familiar local flavors in a refreshingly new way at Guevarra's. The featured dishes by the guest chefs will also be incorporated in the buffet line-up at Guevarra's for the months of May and June. 


For Chefs Michael Pastrana and Morris Danzen Catanghal, the beauty of food is its ability to access cherished memories no matter where you are in the world. And that's exactly what Adobros envisions with their culinary creations drawing inspiration from nostalgic street food to fine dining. Back in Australia, Chefs Michael Pastrana and Morris Danzen Catanghal have created a space "where guests can connect with the stories behind our food and indulge in a multi-sensorial journey bringing the best of Australian produce and elevating Filipino flavors." 


It's this fusion of distinctive local flavors combined with the finest Australian produce and ingredients inspired by heritage and driven by innovation that have elevated comforting local classics intricately reinterpreted by the Adobros. With their creations, Filipino cuisine is slowly getting the world's attention with its rightful place on the global table. And about time too. 


The fond memories of home takes the Adobros back to a hearty dish with their version of paella. The Adobong Pusit Valenciana brings deep, bold and savory briny notes with each spoonful, kicked up by the clean and fresh notes of the succulent squid. Simple and uncomplicated, it's always all about flavors and the Adobros stays true to tradition with this rendition.

...stuffed in squid and deep-fried for savory bites with the Adobong Pusit Valenciana 2-Ways. Filipino flavors offer infinite possibilities limited only by your imagination. 


Armed with a wealth of experience from working and being based abroad, Chefs Michael Pastrana and Morris Danzen Catanghal bring with them a much broader and unique culinary perspective with ingredients and techniques. And this results in some very creative and even surprising yet pleasantly unexpected renditions...


...like the Tinola sa Gata, a rich and creamy interpretation of a local staple. The juicy chicken meatballs, the lusciously creamy finish of the coconut milk-based sauce and subtle yet sharp hints of ginger combine for a whole new flavorful experience. It's innovations like this that refresh and deepen our appreciation for local cuisine. 


In between bites, Destileria Limtuaco shared their own libations like the Gin Basil Mint blended with their own Manille Liqueur de Calamansi. Just what you need to cleanse the palate with even more savory dishes yet to come from Adobros at Guevarra's


The Chicken Afritada Croquettes with Harissa and Pea Purée by Adobros takes local flavors up a notch with a modern and elegant presentation. And the play on contrasting textures and notes are spot on for a fresh new way of presenting and enjoying local flavors. Comfortingly familiar flavors become refreshingly new and different with just a few bites. 


Then, the Adobros adds an Aussie spin to the iconic Filipino staple with the Lamb Adobo. It just isn't complete without adobo, right? 


Elegantly plated, the Lamb Adobo by the Adobros comes full circle and finally comes home by way of Australia. A beautifully plated dish, the savory richness of the lamb gives the dish an elegant finish for some next level adobo. In an elegant blend of Filipino heritage, Australian ingredients and modern execution, the Lamb Adobo becomes a masterful weave of flavors ready for the global stage. The range of dishes presented by Adobros becomes a snapshot of the evolving local cuisine while staying true to its roots. 


A feast like this deserves dessert, and Chef Jac has one more decadent surprise at Guevarra's...


...with the intricate Ube Alfajores. The distinct color of the delicate dessert creation is a sure sign of the local tuber, and the flavors immediately delights the palate for the perfect sweet ending of a memorable feast at Guevarra's showcasing the evolving local cuisine. 


And all these dishes will be available at the buffet spread of Guevarra's from May until June. A national cuisine is said to be a compilation of stories from both history and tradition shaping an identity. But it's not a closed book, with many more chapters and volumes still to be written. And as our local cuisine continues to evolve with fresh perspectives, the chapters become even more colorful and diverse. And alive.
