At the fresh seafood and salad station, Chef Philip John Golding prepared a simple yet elaborate dish with premium scallops...
...laid on a bed of garden fresh and crisp greens tossed in a vibrant dressing paired with a thick sauce made from herbs and peppers.
Deceptively simple, the fresh and clean notes of the succulent scallops delicately seared on the pan comes through with a burst of briny sweetness complemented by the equally bold tartness of the greens and sauce for an elaborate medley of flavorful richness. The finest ingredients and masterful execution combine for exquisite dishes made even more special by its sheer elegance in its simplicity. Don't expect Chef Philip's new dishes on the menu just yet. But you can expect a lot of new additions anytime soon.

Chef Philip John Golding then brings out yet another fresh catch with the Smoked Salmon. Beautifully plated with a side of fresh salad greens, crisp crostini and poached quail eggs, the presentation becomes a story in itself following the playbook of Fable Cafe + Lounge.

Fork-tender beef with the deep nutty hints of garlic, the Australian Beef Salpicao (P 820) with slabs of beef tenderloin glazed with soy and served with potatoes and garlic rice is one of those hearty meals you'll find at Fable Cafe + Lounge that will have you coming back again and again. Simple yet perfectly executed with premium ingredients, the dish is a hearty and satisfying meal option at Fable Cafe + Lounge.

The light and delicate crispness and juicy texture of the Cebu Lechon Belly (P 1,240) served with creamy coconut adlai grain and atchara brings contrasting flavors and textures into play in a comfortingly familiar yet elegantly executed rendition of a local staple. That first bite is announced by a delectable crunch followed by the subtle sweetness of the juicy pork pairing well with a spoonful of the coconut adlai grain for another layer of richness. The atchara and spiced vinegar sauce cuts through the savory richness for that balanced finish. Other savory mains include the Sumo Sea Bass (P 1,390) and Prime Ribeye Steak (P 5,500).
The Big Bad Wolf's Sisig Taco (P 325) has to be one of Fable Cafe + Lounge's most talked about stories with tender and crisp pork belly slathered with signature sauce topped with crunchy chicharon on soft tortillas and served with onions, pico de gallo and fresh chilies.
A fresh squeeze of calamansi brings that zesty fresh burst of flavor with each bite while the onions, pico de gallo and fiery chilies completes the elaborate play on local notes presented and reinterpreted with that creative Fable Cafe + Lounge flair. Keeping in theme with its lounge concept, Fable Cafe + Lounge also offers an extensive array from their Enchanted Bites menu like the Spinach Dip with Crostini (P 540) and The Emperor's Shrimp Dumplings (P 540).

...and capped by The Stout Traveler (P 600), a soothing concoction with Buffalo Trace Bourbon, Amaro Blend, citrus and vanilla. My personal pick that evening, the Stout Traveler with its deep robust notes and silky smooth finish is the cocktail before or after your feast at Fable Cafe + Lounge.
Pair your next round of cocktails with tasty bites like the Chipirones De Ursula (P 655), a crunchy number with crispy baby Aklan squid served with chili oil and honey tomato sauce.
The evolving menu is a part of the journey, a recurring process to refresh, renew and spark the creative process. At Fable Cafe + Lounge, these are the stories that enrich the dining experience.
