What's in the Fridge...Cucumber Salad

Found this amazing cucumber salad recipe that is so simple yet full of flavor from mamacook at http://mamacook.blogspot.co.uk/.  This cool recipe is for a traditional Indian cucumber salad called Kachumber (see post and full recipe here at http://mamacook.blogspot.co.uk/2012/04/kachumber-indian-salad.html), a perfect and cooling side dish to curries. I see another fridge raid coming up...

Mamacook's Kachumber recipe calls for the following ingredients: Cucumbers. Check. Tomatoes. Check. Onions. Check. Sugar or sweetener. Check. A lime or lemon...uh-oh...will have to improvise here with the native lime or kalamansi. Salt and chili powder to taste and we have a Kachumber Salad, or something close to it.

I added a sliced green chili for a little heat, maybe I'll just use half next time...sniff.

Dice the cucumber, tomatoes onions, add the other ingredients and simply mix in a bowl. Simple, clean flavors. Awesome.

Thanks to Mamacook for an amazing recipe!

  1. What a refreshing salad! I do not have many recipes that have cucumber in it so I am glad to come across this. This does proof that raw vegetables can come together to make a great dish-yum!
