Impressed: Beef and Wine Nights at Impressions.

Wine and cheese? Make that Wine and Beef...at Impressions.

Impressions offers diners a whole new and refreshing take on wine pairing with its Beef and Wine Nights, elevating the wine pairing experience with a savory and beefy spin.

Located at the third floor of Maxims Hotel at Resorts World Manila (more on Impressions on my previous post, A Lasting Impression at Impressions), Impressions lays out a sumptuous buffet spread with its Beef and Wine Nights. That evening, wines from Canyon Road (L) were served along with the sumptuous spread (R).

A selection of premium cheeses, charcuterie, and savory all-beef appetizers pair well with the whites and and reds of Canyon Road, with tasty bites that's big on flavor. At Impressions' Beef and Wine Nights, you can just go with the flow without worrying about rules, simply enjoy your red or white wine with whatever pleases you.

A few more glasses of wine, and it's time to head back to the buffet spread for even more little plates of savory and beefy starters...

At the buffet spread in front of the open kitchen, one can find Grilled Homemade Beef Burger Sliders, Smoked Beef Bacon Salad, Beef Carpaccio, Ground Beef Chuck Kebabs, Beef Ravioli with Three Sauces (Poodoro, Beef Jus, and Cheese), Spicy Chili con Carne with Red Beans, and Thai Beef Beef Salad. And master chef Cyrille Soenen, the only local chef recognized by the prestigious Maitres Cuisinieres de France, has even more savory treats in store for diners...

Other tasty starters include the Homemade Beef Sausage (L), juicy and bursting with rich flavors and a Bone Marrow dish (R) with its creamy richness. The buffet of beef appetizers paired with wine are a meal in itself, and you can come back for seconds. And thirds.

I enjoyed Chef Cyrille Soenen's Gratinated Beef Meat Balls with Sauce Mornay...

...and the inventive Strawberry Beef Carpaccio, with the juicy richness of the premium beef tempered by the tart notes of fresh strawberries for balanced flavors. It's a wine pairing experience like no other, with a wide array of savory appetizers and free-flowing wine. And the wine pairing can be quite filling, a light yet satisfying dinner, and a great alternative to the usual dinner (you can call Impressions directly at 908-8883 for updates on the next Beef and Wine Night schedules). But if you're craving for more beef, the Carving Station at Impressions should do the trick (separately charged).

Later that evening, Impressions' live station chefs then fired up the grill (L) as guests were welcomed by the staff headed by Arnold (R) and led to their tables. The open kitchen layout is part of the dining experience at Impression, and there's just nothing like a premium slab of beef fired on a grill...

That evening, the Carving Station at Impressions featured their Glazed Beef Short Ribs...

...a rustic Beef Wellington with tender and juicy beef wrapped in a light pastry shell with mushrooms...

...a premium slab of Beef Top Blade...

...and the classic US Prime Rib, take your pick.

The Carving Station at Impressions offers some of the finest beef in the metro, expertly prepared by Chef Cyrille Soenen's team. As more wine was poured, the station chefs prepared our beef dishes...

With Executive Chef Cyrille Soennen at the helm of Impressions' kitchen (more on Chef Cyrille Soennen on my post, Maitres Cuisiniers de France Master Chef), you can expect world-class cuisine served daily, like the Pot au Feu, with finely shredded beef and vegetables, separately poured with hot beef consomme.

Then, our US Ribeye was served, perfectly grilled to medium rare with its juicy pink center...

...followed by the Beef Wellington, a duo of beef dishes combining for another memorable dining experience at Impressions. One more glass of wine? Absolutely.

A platter of indulgent Mignardises, with its colorful selection of delicate pastries, caps our Beef and Wine Night at Impressions. Whether you go for the Beef and Wine Night or the savory beef dishes from the Carving Station, Impressions promises a dinner experience like no other. Impressed once again...at Impressions.
