Simple, uncomplicated and uncluttered with just the freshest ingredients, the Tomato and Local Handmade Burata (P 695) delivers fresh and clean flavors, with the richness of the handmade burata tempered by the tart tomatoes for balanced flavors.


Executive Chef James Williams then served one of his creative and comforting side dishes, the Spam Fries with Ketchup and Mayonnaise (P 470). The thick-cut slabs of Spam are lightly coated with a crisp batter for contrasting texture, with the distinct salty notes of Spam coming through with a flavorful punch. The Spam Fries works, a playfully inventive spin that transforms the comfortingly familiar to something new and refreshingly different.


The Lounge also offers rustic pizzas made with handcrafted local cheese, like the Asiago Cheese, Mushroom  and Truffle Pizza (P 750) and the Salami and Tallagio Pizza (P 700). Served on wooden boards, the thin crust pizzas are perfectly crisp, with the rich notes of the handcrafted local cheese weaving in for bold flavors.


In contrast with the bold flavors of the Salami and Tallagio Pizza, the Asiago, Mushroom and Truffle Pizza delivers simpler yet equally rich notes, punctuated by the fresh and minty arugula. A meal in itself or a light snack with friends, The rustic pizzas are just one of the many reasons to visit The Lounge.


And here's another. Make that three more reasons to visit The Lounge, with the Trio Sliders (P 845), with truffle and foie gras beef slider in black sesame brioche, sous vide chicken breast in beetroot and oats bun, and beer-battered fish on squid ink and polenta bun. Each order is served with onion crisps with mayo and ketchup. This, and a cold Elementary English Ale from Pedro Brewcrafters...perfect. The Lounge also serves fine craft beers from Craftpoint Brewing.


Each Slider has its own unique flavor profile, making each bite different. The delicate notes of the sous vide chicken breast are kicked up by the cheese, tomatoes and the beetroot and oatmeal bun, the mild flavors of the beer-battered fish fillet are complemented by the distinct notes of the squid ink bun, and the premium beef patty with truffles and foie gras, well, says it all. It's also the perfect dish for fathers celebrating an extended Father's Day for the month of June. And the sliders aren't tiny, the Trio Sliders combine for a pretty satisfying and filling meal.
