Grillin' At The April CCA Manila Monthly Mixer

Another proud CCA Manila alumnus comes home as Chef Jonvic Mangibin takes over the grills at the CCA Show Kitchen for the April Monthly Mixer series...

A monthly business and networking event, the CCA Monthly Mixer Series hosted by CCA Manila Director of Culinary Innovation Chef Philip John Golding serves to connect the hospitality, food, beverage, corporate and supplier sectors in a professional community setting. The massive CCA Show Kitchen becomes an ideal space for collaborations and partnerships showcasing culinary talent and products while positioning CCA Manila as a hub for industry connection and innovation. That evening, the spotlight focused on Chef Jonvic Mangibin from CCA Manila's long and illustrious roster of successful graduates. The founder of King Inasal, Chef Jonvic Mangibin shared his take on familiar local flavors anchored on his signature chicken inasal. Read on and see what's cookin' and grillin' at the April CCA Monthly Mixer...

As with past editions of the CCA Monthly Mixer Series, the event brings the culinary community together with shared goals. And for some, it's a homecoming honoring the origins of a culinary journey. For Chef Jonvic Mangibin, this is where it all began (for more on the CCA Show Kitchen Monthly Mixers, see my posts Breaking Down The Classic Cheeseburger At The March CCA Monthly Mixer featuring Chef Aaron Lau's elevated take on a beloved staple from last month, Celebrating International Chefs Day With The Michelin Selected Gordon Ramsay Bar And Grill Take Over At The CCA Show Kitchen October Mixer from November last year, Beer, Bagels And Salads At The Fourth CCA Show Kitchen Mixer from late last year and Home For The Holidays: A Memorable Homecoming At The CCA Show Kitchen December Mixer With Chef Migo Razon from December last year).

I first met Chef Jonvic Mangibin way back in 2014 during the early days of my own food blog featuring many of his culinary concepts (see my previous posts Olive Tree Kitchen & Bar: Sampling OTKB's Tasting Menu And Cocktails from twelve years ago, Popping Up For Brunch At The Gas3nomic Brunch from 2015, New Favorites: Lola Cafe + Bar's New Menu By Chef Jonvic Mangibin from eleven years back and Asian Flavors At Liberty Kitchen + Brew from 2016). The culinary scene has evolved since, and so has Chef Jonvic Mangibin. Adapting a more "agile" business model, Chef Jonvic Mangibin takes on familiar local staples with a refreshed perspective with his successful brand, King Inasal. Flexible and scalable to fit any local market's profile, Chef Jonvic Mangibin explores key areas north of the metro with a robust delivery-based model and affordable pricing to drive the brand's reach and exposure. And so far, it's a system that works as he expands further up north.

At the heart of the King Inasal concept is Chef Jonvic Mangibin's specialty grilled chicken with his proprietary marinade and secret blend of spices and seasonings. The real trick is keeping the grilled chicken tender and juicy to the bite followed by a flavorful savory burst. And Chef Jonvic Mangibin and his team has perfected the formula to give it an edge from the usual tough and dry options in the metro. Now for some libations...

The Wine Club, led by General Manager Michael William Reyes, shared their latest collection at the monthly mixer featuring Red, White and Rosé expressions from California's House of Brown Wines (for more on The Wine Club, see my posts Raising The Meat of The Matter With Texan Gelbvieh-Angus Cross Artisan Beef From The Ridge At Loafer's Glory from 2023 and The Table Of Disciples Of Escoffier Presents Chef Dan Koh At The Wine Club also from three years back).

As the grill is loaded with more slabs of chicken, Chef Philip John Golding prepared his own repertoire of fresh flavors at the counter...

...with the freshest produce from Future Fresh, a long-time partner and collaborator for the CCA Monthly Mixer Series

Meanwhile, students of CCA Manila prepared and served their own sumptuous spread at the April Monthly Mixer fresh from CCA Show Kitchen

Chef Jonvic Mangibin then transfers his batch fresh off the grill to the oven...

...for the final finishing touch while remaining moist and juicy, a system perfected through the years at King Inasal

That evening, Chef Jonvic Mangibin shared the other specialties of King Inasal like the classic Sisig enriched with chicken liver...

...and savory Adobo sa Pula simmered with annatto oil. Both savory renditions brings comforting even nostalgic notes warming the palate as you go for another bite. For Chef Jonvic Mangibin, it's all about simple, honest and real flavors done well at King Inasal

Then, the signature Chicken Inasal was served with their specialty rice and housemade pickles paired with a side of chili ginger sauce. Each component of the dish perfectly complements the other for a complete and solid meal guaranteed to satisfy any craving.

And the never empty grill continued to be loaded and fired up all evening. In one memorable dinner, relevant connections were established and relationships strengthened sparked by the spirit of collaboration and innovation for another successful edition of the CCA Monthly Mixers Series. And you'll definitely hear more from Chef Jonvic Mangibin soon...
