As Thai As It Gets: Sabai Shares Its Elevated Take on Comforting Thai Cuisine

Local diners will soon experience an authentic taste of Thailand, meticulously recreated with an elegant spin for a refreshing and exciting new Thai dining experience. Inspired by the collective memories from cherished homestyle recipes, Chef Tob and his culinary team from Thailand recreate their stories with each dish at the newest Thai dining destination...

From the same group behind Uma Nota, the spotlight shifts to authentic Thai comfort food at Sabai offering diners a more intimate and deeply personal dive into real and honest Thai flavors. This is Thai cuisine lavishly prepared with heart and soul inspired by tradition and stories that define the rich culinary heritage. Read on for a sneak peek of Sabai...

Helmed by Chef Tob, the soon to open Thai restaurant promises authenticity with a whole lot of heart in their bold and vibrant repertoire of Thai offerings. Armed with a wealth of experience with stints in Michelin starred restaurants, Chef Tob resists the temptation of reinventing Thai flavors. Instead, Chef Tob and his team preserves and maintains tradition while elegantly elevating each dish with a refined style for a true taste of Thailand. At its heart is comforting Thai flavors, staying true to the restaurant's name which means a feeling of ease. This respect for Thai cuisine is reflected in each dish served at the exclusive preview...

...starting with the Pla Kung Yang or flame-kissed Tiger prawns tossed in lemongrass, kaffir lime and fiery chilies. Chef Tob lets each fresh ingredient do all the talking as it drapes the palate with its clean, vibrant and unrestrained flavors. The briny sweetness of the Tiger prawns comes through followed by the distinct notes of the aromatics and that lingering spicy heat from the chilies. If there's anything that Chef Tob tweaked in his dishes, it's probably the level of spice. Subdued and tamed, but it's there with each tasty bite reminding you of the potent chilies from Chef Tob's kitchen.

The Khao Kreab Cream Mun Pu with crab fat has to be one of the most anticipated specialties at Sabai. What can be more indulgent than creamy luscious crab fat, right? A thin and crispy ball-shaped rice pancake is filled with Chef Tob's rich crab fat salad for a delectably indulgent play on textural contrasts and unapologetically decadent savory finish.

Fond childhood memories becomes the inspiration for Chef Tob's next dish, the Tom Sap Pla Khao or spicy sour soup with tender slabs of grouper gently simmered with Thai herbs. With just the right amount of spicy heat, each sip comforts the palate with its fresh and clean, uncluttered notes.

The Khai Look Khuey is Chef Tob's version of the popular Thai staple, the Son-in-Law Eggs or fried boiled eggs with sweet and tart tamarind sauce. The lightly crisp outer layer and runny yolk combine for a luscious richness tempered by the sharp notes of the tamarind sauce for an elegantly balanced dish.

The Kung Pad Prik Klueay or stir-fried succulent prawns with garlic, chili and salt is yet another example where the pure and natural flavors of the ingredients shine. The delicate briny sweetness of the prawns are perfectly complemented by the garlic, salt and fresh chilies straight off the fiery wok. The fresh snap with each bite releases vibrant yet clean notes with just a whisper of gentle heat.

The savory richness of the Kang Panang Nuea Nong Lai or stewed beef silver shank simmered in a thick and flavorful panang curry is comfort food straight from a home kitchen in Bangkok elevated with premium ingredients and the master's exquisite touch. The fork-tender beef delivers bold beefy notes enhanced by the equally flavorful curry. And there is some heat, not palate-numbing but the lingering kind. And this is where a bowl of steamed Jasmine rice comes in handy to temper the spice.

Sabai also offers creative handcrafted cocktails like the One In A Melon with its blend of Pink Gin, homemade Thai basil syrup, fresh watermelon juice and lemon...

...and the Funk You Pineapple, a spicy margarita in true Thai style with Tequila Blanco, fresh pineapple juice, orange liqueur and chili syrup. The chili garnish is no surprise. Both handcrafted libations offer fresh flavors to complement your dining experience at Sabai

And for dessert, Chef Tob served his Ice Cream Khai Kang for a fitting finale to an elegant Thai feast. The silky smooth coconut ice cream is crowned with golden egg thread adding texture with each soft and creamy bite. Authenticity, tradition and passion for real and honest flavors are the anchors for BGC's newest Thai dining destination and that in itself is a refreshing change from the current obsession with creative innovation and reinvention in the competitive and cluttered restaurant scene.
