Read on for a tasty peek...
The local Japanese dining scene is extremely competitive and cluttered, yet Ginza Modern Japanese Dining stands out as a top destination with its well-curated menu and exceptional dishes made more special with visiting Japanese chefs offering diners a rare taste of Japan's finest (see more on my previous post, Ginza Japanese Restaurant x Kurobuta Tonkatsu Horiichi: From Tokyo To Manila, Acclaimed Michelin Bib Gourmand Chef Hironobu Horiuchi Brings His Signature Tonkatsu To Ginza Japanese Restaurant In Ortigas from June early this year).
For its latest edition in a continuing series, Chef Masahiku Kodama is the featured attraction at Ginza Modern Japanese Dining at Ortigas. Now the chef-in-residence, Chef Masahiku Kodama will be offering his famous grilled chicken skewers at more accessible price points. Known as the chef behind the popular Michelin recognized Yakitori Masakichi in Tokyo, Chef Masahiku Kodama was also featured in David Chang's widely praised Ugly Delicious, an award-winning TV Series on Netflix.
But first, some refreshing libations and the Azuki Shake (P 200) made with red beans is uniquely satisfying with its sweet and deep earthy and nutty notes to open up the palate. Ginza Modern Japanese Dining also offer fresh Avocado, Mango and Watermelon Shakes.
In between refreshing sips, the kitchen of Ginza Modern Japanese Dining presented one of their signature starters. The Nihon Kaki Motoyaki (P 500-3 pcs) or torched Japanese oysters topped with house blend miso mayo teases the palate with its delicate yet indulgent savory richness.
The plump and succulent Japanese oyster delivers a fresh, clean briny sweetness with subtle hints of smoky notes, perfectly finished by the creamy and silky smooth miso mayo for contrasting yet balanced flavors. It's a great start to your dining experience at Ginza Modern Japanese Dining...
Then, Chef Masahiku Kodama's lunch exclusive teishoku set is served. Available from 11:00 am to 3:00 pm all week from Monday to Sunday, the Lunch Teishoku Sets (P 1,150) by Chef Masahiku Kodama at Ginza Modern Japanese Dining come in four tempting options including the Soborodon Set with ground chicken, spinach, and egg over rice, the Yakitori Don Set with a variety of unskewered grilled chicken specialties like ground chicken and boneless wings on rice, and the Kodama Ramen Set with chashudon. I go for the Yakitori Platter Set...
...with Momo or chicken thighs, Tsukune or ground chicken meatballs, Kawa or grilled and crisp chicken skin, Bonjiri or chicken tail, and the Grilled Vegetable Skewer with Chicken, squash and eggplant. To complete the set, your lunch includes a comforting bowl of Kakesoba with noodles in a light and flavorful broth, the Smoked Tori Salad with tender smoked chicken and ginger, the Tare Gohan or Japanese rice drizzled with Chef Masahiku Kodama's special sauce and topped with nori, the starter trio of sumptuous Japanese Potato Salad topped with egg and crisp chicken skin, a side of pickled cucumber and Tori Riba Paté or chicken liver on toast topped with strawberries and blueberries. Now, that's a pretty loaded lunch set. And you get dessert too making this an even better deal. The Yakitori Platter Set by Chef Masahiku Kodama also includes a trio of special salts to pair with the yakitori with Yuzu Salt, spicy Togarashi Salt and Matcha Salt.
The garden-fresh and clean notes of the Smoked Tori Salad are enhanced by the subtle smoky hints from the tender chicken for even more flavor...
...while the Tare Gohan punches up the flavors with its drizzle of Chef Masahiku Kodama's sweet and savory special Tare Sauce.
The Kakesoba complements the feast with its soothing notes to warm the palate...
...before that first savory and juicy bite of Chef Masahiku Kodama's specialty yakiniku selection.
Each skewer is draped in Chef Masahiku Kodama's special Tare sauce and you don't need anything else. But for the fattier skewers like the Kawa or chicken skin, a dip in the Yuzu Salt just cuts through the savory richness for that perfectly balanced finish.
The creamy Japanese Potato Salad brings a delectable play on contrasting flavors and textures with the egg and crisp chicken skin contributing to the flavorful medley.
A Japanese konro grill fired up with binchotan comes with each order so you can conveniently warm up your skewers right on your table for that fresh off the grill finish. It's a nice touch by Ginza Modern Japanese Dining, ensuring you get to enjoy each bite at its flavorful peak. The Momo or chicken thighs is tender and juicy delivering all the flavors on its own capped by Chef Masahiku Kodama's special sauce...
...while the Tsukune or ground chicken meatball brings delicate notes to the palate...
...followed by just a whisper of smoky hints from the tabletop konro grill and an indulgent richness from the grated cured egg yolk for another masterful play on flavors by Chef Masahiku Kodama.
The tender and juicy Kawa brings a flavorful burst with each bite, draping the palate with a lingering savory richness. The Yuzu Salt or spicy Togarashi Salt adds contrast while tempering the richness of the crisp chicken skin.
The Bonjiri or chicken tail is also packed with solid savory flavors complemented by subtle smoky hints. Try this with a dab of Togarashi Salt. Or Matcha Salt for balanced flavors. And yes, that bowl of Tare Gohan completes the feast at Ginza Modern Japanese Dining.
That seamless weave of fresh and subtle sweetness from the squash and eggplant are perfectly complemented by the juicy chicken for a refreshing change of pace. The Grilled Vegetable Skewer with Chicken is good on its own.
Each component on the Yakitori Platter Set by Chef Masahiku Kodama combine for a flavorful and value-packed meal. It's a complete and satisfying feast on a tray that's absolutely well worth what it costs. From the skewers and wide array of tasty sides, this one's high on my list of personal picks. For dinner, Chef Masahiku Kodama offers the Kodama Special Yakitori Platter Set (P 2,400 good for two) at Ginza Modern Japanese Dining for a different taste of the master chef's meticulous play on flavors.
How do you cap a sumptuous lunch with the Yakitori Platter Set by Chef Masahiku Kodama at Ginza Modern Japanese Dining? Why, with the Kodama Special Pudding of course. Think of it as the special icing on the cake for the Yakitori Platter Set.
Elegantly plated and presented, luscious and silky smooth, the Kodama Special Pudding is the picture-perfect sweet ending to the Yakiniku Platter Set. And there's more...
If your day starts early, then have a great Ginza morning with the Breakfast specials at Ginza Modern Japanese Dining with six savory options like the Chef Kodama Special Breakfast Donburi (P 399) with pork chasu on garlic gohan topped with two sunny side-up eggs and a side salad, the Tontoro Bacon (P 299) with crisp, paper-thin pork strips on garlic gohan, scrambled eggs and side salad, the Chicken Karaage (P 299), the Grilled Aji (P 399) with grilled smoked mackerel and Tori Tamago Sando (P 399), a stacked Kodama style fried chicken katsu with egg salad sandwich. My pick? That day, the Breakfast Hamburg (P 399) seemed pretty hard to resist. How can you pass up on two charcoal grilled Japanese style beef patties with demi glace sauce served on garlic gohan topped with scrambled eggs and a side salad, right?
The side of watercress salad brings fresh flavors to your day's start, while the generous mound of garlic gohan draped in fluffy scrambled eggs is the flavorful base to your hearty breakfast. Then, there's the charcoal grilled Japanese beef patties slathered in rich demi glace sprinkled with spring onions and pickled onions. This breakfast definitely sets the tone for the rest of your day with its savory ensemble of comforting Japanese flavors in a bowl.
