A Winning Trio with Tsuta's New Chef Yuki Originals

Often regarded as the holy grail of ramen broth, the classic Tonkotsu is given a refreshing new spin at the Michelin-Star Japanese Soba Noodles Tsuta...

Chef and Founder Onishi Yuki tempts your palate once more at Tsuta with three new Chef Yuki Originals starting December 6, 2019. From the classic version made even richer, a garlic infused variant and a spicy option, Tsuta is all set to stir up your ramen cravings before the year ends (for more on Tsuta, see my earlier posts, A Bowl of Ramen and a Michelin-Star Dining Experience at Tsuta on my first time at Tsuta and Shoyu Ramen? Let Tsuta Ramen Shoyu The Way... on their seasonal offerings). Here's three for the win at Tsuta...

Start your dining experience at Tsuta with tasty bites like the signature Gyoza, savory dumplings with a soft and crisp texture...

...with Japanese Kirin Beer before your bowl of soothing ramen. While enjoying a sip and a bite, the open kitchen layout at Tsuta gives diners a glimpse at the magic behind each bowl of signature ramen prepared by chefs trained by founder Onishi Yuki himself.

Pair your ice-cold Kirin Beer with even more savory bites like the Ro-Su Charsiu (L) with fork-tender slices of delicately roasted pork topped with fresh leeks and watercress drizzled with an indulgently rich butter sauce and the Aburi Niku (R), tender pork cubes torched for that sweet caramelized crust slathered with onion sauce.

The signature tonkotsu broth at Tsuta is made with loads of premium black pork bones and trotters simmered for hours resulting in that distinctly creamy, collagen-rich broth with its smooth and silky mouth feel and texture. Tsuta's broth or dashi is a delicate blend of various oils and sauces delivering the multi-layered umami flavor Tsuta is known for, the perfect base for their handmade noodles and pork. The Tonkotsu Soba (P 390) is Chef Yuki's own version of a classic made richer with a creamy collagen-rich broth. One sip, and the deep notes of the broth drapes the palate with layers of umami richness. The end result of black pork bones and trotters boiled at high temperatures for hours is a milky broth that perfectly complements the soft yet chewy soba noodles and savory pork charsiu. The addition of Hokkaido sea kelp and shiitake mushrooms enrich the broth with even more umami flavors. All-natural ingredients without the use of any artificial enhancers like MSG makes each bowl deliver real flavors. Make your bowl of Tonkotsu Soba even richer with the addition of Tamago or soft-boiled egg for that flavorful punch.

The Kurobishio Tonkotsu Soba (P 450) features one more layer of flavor from the deep, nutty notes of black garlic oil infused in the milky broth for rich yet balanced notes. The blend of natural aromatics adds subtle earthy and woody hints along with the fragrant burnt garlic. Topped with homemade black pepper minced pork, black fungus mushrooms and fried garlic chips for both texture and flavor, this bowl of ramen bursts with bold flavors with a delicately balanced finish. Chef Yuki's Kurobishio Tonkotsu Soba is another elegant tonkotsu variation with the black garlic oil, black pepper minced pork and fried garlic chips combining seamlessly adding depth to its complex layers of flavors.

Like the original Tonkotsu Soba, the richness of the dashi ties everything together along with the various components in the Kurobishio Tonkotsu Soba. The creamy broth with its visible dark patches of black garlic oil is a visual clue to its richness. But there's one more bowl to try with spicy kick...

The vibrant orange hues of the Spicy Tonkotsu Soba (P 450) immediately tells you this bowl is packing some serious heat. The creamy richness of Tsuta's dashi is perfectly tempered with the addition of Mala minced pork and spices for that soothing level of spice. But the heat doesn't overwhelm the palate, another sip brings the subtle sharpness of the spices in a gentle yet numbing finish that lingers on the palate.

Topped with crushed peanuts and goji berries, the Spicy Tonkotsu Soba warms both your palate and body in another masterful soba creation by Chef Onishi Yuki. It's no wonder Tsuta earned the rare distinction as the very first ramen restaurant in the world with a Michelin Star. Take your pick, or go for all three. That's three for the win at Tsuta...
