The new signature cocktail of Port Bar is an aromatic masterpiece of flavors in depth with a bold and even moody character and a timeless warmth inspired by the classics. Ordering a round is both engaging and entertaining as it includes a show detailing each step behind the new cocktail including the infusion of smoke. Blended with Fundador Light Brandy, homemade spice syrup, fresh lemon juice and ginger ale, The Port offers a medley of contrasting notes seemingly coming together effortlessly from that first sip all the way to the last. Anchored by the full-bodied character and notes of brandy with its rich velvety depth to the complex play on sweet and spicy hints from homemade spice syrup, subtle yet bright sharpness of the fresh lemon juice and lingering sweetness of the ginger ale all neatly bound together by that gentle whisper of smokiness. Hilton Manila Executive Chef Lord Bayaban promises a more immersive dining experience at the all-day dining buffet restaurant, Kusina Sea Kitchens with the addition of live stations paired with more regional offerings reflecting the new dining reimagined proposition of the property. The Western Station with its impressive roasts and carvings is now named the Smokehaus with its tempting array of slow-cooked smoked meats and barbecue with prime cuts and premium carvings. The Seafood Dampa with the day's freshest catch also makes its triumphant return to the buffet line-up. Plus an Oyster Station too. And you'll now find a dedicated Indo-Malay Station with authentic Indonesian and Malaysian dishes as part of the sumptuous offerings in addition to the popular Filipino, Japanese, Noodles, Vegetarian and decadent Dessert Station completing the massive and impressive revamp.
