From Batchoy and Inasal to Pancit Molo and Kadios, Baboy, Langka, Iloilo spins its own unique vibrant tapestry of colorful flavors to the rich and diverse weave of our national culinary identity. And when you mention Iloilo, the dish kansi is soon part of the conversation. And no other name is more associated with the local specialty than Pat-Pat's Kansi, now with its newest branch in the Pasig Ortigas area. Read on for a serving of Iloilo's pride in a bowl...

Located at the Ground Floor of The Pearl Place along Pearl Drive in the Ortigas CBD, Pat-Pat's Kansi is your new gateway to authentic Ilonggo flavors bannered by the famous kansi. The renowned beef soup dish is said to be Iloilo's version of the bulalo, soured with the indigenous batuan giving it a distinctive mild and soothing sharpness perfectly tempering the savory richness of the beef. Think of it as bulalo and sinigang in one bowl. Usually served with a side of soy sauce, calamansi and chilies as a dip with steaming hot rice, the similarities end with that first sip and bite. Unlike the usual bulalo, the Ilongoo kansi doesn't really need any additional sauce or dip being already flavorful on its own. Made from a cherished family recipe perfected over generations, Pat-Pat's Kansi brings you the very best of Iloilo with every bowl of its signature kansi.

The menu at Pat-Pat's Kansi includes a veritable play list of comforting local cuisine including Laing (P 190), the ubiquitous Bicolano vegetable dish with shredded taro leaves simmered in rich coconut milk and spiced with chilies. The subtle sweetness and nutty hints of the near melt-in-your-mouth taro leaves lingers on the palate followed by a soothing layer of heat from the chilies elegantly smoothened by the silky smooth richness of the coconut milk for that balanced finish.
Fresh off the grill, Pat-Pat's Kansi also offers another Ilonggo staple with their selection of Inasal with traditional marinade and annatto. A feast in itself, enjoy Paa (chicken leg) with Plain Rice (P 185) or Petcho (chicken breast) with Plain Rice (P 195). Want more inasal? The Isol or butt (P 85), Gizzard (P 70), Atay or liver (P 85) and Corazon or heart (P 85) should do the trick.
Then, there's the seafood selections at Pat-Pat's Kansi like the Boneless Bangus (P 445) to add to your feast of local flavors. The fresh and clean sweetness of the local milkfish and lightly crisp textures are completed by the crunchy garlic bits and soy vinegar dip with extra chilies. Other must-try grilled seafood offerings at Pat-Pat's Kansi include the Grilled Pusit (P 395), Tuna Belly (P 595) and Panga (P 595).
Pat-Pat's Kansi's homage to a local classic from Pampanga is served sizzling hot and topped with egg with the Pork Sisig (P 275). Made with tender and chopped pork jowl and ears, the crunchy cartilage and connective tissues brings a layer of contrasting textures followed by an indulgent savory finish. This one's legit.
But it's the much anticipated arrival of the classic Kansi Bulalo (P 320 Regular/P 380 Large/P 450 Extra Large) at Pat-Pat's Kansi that brightens up yet another rainy afternoon in the metro. The massive bone filled with silky smooth and buttery marrow adds a creamy and flavorful depth to the sour beef broth for complex yet comforting notes. The deceptively light broth simmered for hours is packed with rich flavors complemented by the distinctive sharpness of the sour batuan.
That unique Ilonggo twist with sour batuan elevates the simple beef bone marrow broth with its bold rounded flavors guaranteed to chase all your rainy day blues away. Already full of flavor on its own, there's just no need for any sauces or condiments to clutter the pure beefy goodness of the famed Ilonggo dish. All you need is an extra bowl of rice.
You can also opt for the Deboned Kansi Bulalo (P 295) that lets you go straight down to business from that very first sip...
...all the way to the last. The batuan infused broth, fork-tender chunks of beef and buttery marrow combine for a satisfying meal with its sheer elegance in its pure and honest simplicity. Each sip warms the palate like a comforting hug and Pat-Pat's Kansi immediately feels like home.
Treat yourself to another heaping ladle of beef bone marrow with another bowl of rice. It's flavors like this that really hits home. And you'll now find it along Pearl Drive at the newest location of Pat-Pat's Kansi.
Pat-Pat's Kansi honors its rich legacy and tradition with its comforting repertoire of local dishes. But Pat-Pat's Kansi also flexes its creative muscle in the kitchen with innovative renditions like the Sizzling Kansi (P 450), a novel and contemporary take on tradition for a whole new way of enjoying tender beef and bone marrow.
Served sizzling hot on a cast iron plate with a variety of fresh vegetables and slathered with savory gravy, the Sizzling Bulalo by Pat-Pat's Kansi is another showstopper of a dish from the kitchens of Pat-Pat's Kansi.
When you have tender slabs of beef with bone marrow and vegetables draped in a thick, creamy gravy served sizzling hot right in front of you, you'll need an extra bowl of rice. And an extra bowl of beef bone marrow broth too. The Sizzling Bulalo stays true to its roots with the subtle hints of sour batuan completing the flavors. But like they all say, you need to save room for dessert in any Filipino feast.
Pat-Pat's Kansi caps your sumptuous meal with its signature Leche Flan (P 300 Full/P 170 Half) made with pure carabao's milk. The decadent local créme caramel is the perfect ending at Pat-Pat's Kansi with its lusciously smooth and sweet notes.
