One of the metro's celebrated chefs, Carlo Miguel, is at the helm of The Food Hall's multiple kitchens showcasing his newest creations. Dubbed as Global Culinary Creations, take your palate on a flavorful journey of rich and diverse flavors at The Food Hall. 


I've known Chef Carlo Miguel since the early days of my blog, and I remember experiencing his whole culinary range from comforting flavors all the way to elegant interpretations of modern cuisine. But it's his passion for the perfect burger that really hooked me along for the ride. At The Food Hall, Chef Carlo Miguel shares his latest burger masterpieces starting with the Truffle Bleu Cheese (P 365) with 1/3 lb. steak-cut all-beef patty covered with creamy Gorgonzola cheese, caramelized onions and nutty truffle aioli on a pillow-soft Hokkaido milk bun. Yes, all of Chef Carlo Miguel's new burgers use these Hokkaido milk buns and that in itself is a must-try. Despite being so soft, these Hokkaido milk buns retain its form while absorbing all the juicy richness of the ingredients all the way to the last bite. There's just nothing more disappointing than a crumbling bun or patty that falls apart midway to ruin your burger experience. The distinct notes of the bleu cheese, truffles and all-beef patty come together perfectly in a seamless blend, delivering multiple layers of rich flavors.


The beefy Wagyu Brisket (P 395) with a hefty 1/3 lb. steak-cut all-beef patty topped with fork-tender 36 hour Sous Vide Wagyu beef brisket, American cheese and grilled onion slathered with sweet and smoky homemade BBQ sauce offers a whole range of contrasting yet balanced flavors with every bite. From the creamy cheese to the sweet grilled onion and the sharp notes of the BBQ sauce capped by the beefy richness of the all-beef patty and sous-vide Wagyu beef brisket, this burger should satisfy any beefy craving. A juicy steak-cut all-beef patty and tender Sous Vide Wagyu beef brisket, it's a beefy duo that just elevates your burger experience.


Chef Carlo Miguel has even more smash hits with the Double Smash Burger (P 365), a juicy burger with a duo of 2 oz. all-beef smashed patties for a double dose of beefy goodness topped with a crisp cheddar cheese crust and slathered with homemade bacon jam and Chef Carlo Miguel's proprietary secret sauce. Smashed with a crisp outer edge, the all-beef patties deliver a different kind of savory richness followed by the sharp notes of the Cheddar and completed by that secret sauce. The secret sauce by Chef Carlo Miguel binds everything together with its creaminess and subtle hints of spicy gochujang and fish sauce for that umami sensation.

Back at the open kitchen of Pound #, Chef Carlo Miguel adds the finishing touches to another burger creation. The Molten Cheeseburger (P 355) includes his signature 1/3 lb. steak-cut all-beef patty topped with a creamy molten cheese blend, crisp lettuce, tomato and mustard relish.

The Surf & Turf Burger (P 385) combines a 1/3 lb. steak-cut all- beef patty with crispy shrimps draped in Thai Sweet Chili and Cilantro cream topped with Mozzarella for a unique surf & turf burger experience. But it's the Foie & Fig Burger (P 645) that caught my attention...
 

That signature 1/3 lb. steak-cut all-beef patty layered with seared foie gras, balsamic figs, mustard relish and Brie cheese makes this the ultimate burger expression. You'll know it with just one bite.  


Can't go wrong with the Bacon Cheeseburger (P 295) with house-ground all-beef patty topped with American cheese, caramelized onions and grilled bacon slathered with Chef Carlo Miguel's secret sauce.  


Ever dreamed of having a burger with everything except the kitchen sink? Now you can...


Aptly named, The Kitchen Sink (P 595) has "everything" on it, literally and figuratively. Except the kitchen sink. Steak-cut all-beef patty, Wagyu brisket, pork carnitas and a thick bacon slab with three kinds of onions and Amercan cheese, this burger has all the game-winning moves from Chef Carlo Miguel's burger playbook. It's one savory layer followed by another that will have you going for another big bite. And another. These new burgers by Chef Carlo Miguel are the real deal.


The Food Hall has so much more to offer consistent with its global cuisine theme. From Flatterie at The Food Hall, indulge in the Creamy Sausage & Mushroom Pasta (P 3650 served family style with Campanelle pasta draped in a rich and creamy Italian sausage and mushroom sauce...


...or enjoy the day's freshest catch with the Seafood Spaghetti (P 495) with squid-ink spaghetti loaded with plump shrimps, squid, succulent clams and mussels sprinkled with chili and drizzled with lemon and olive oil.


Enjoy vibrant Latin flavors from The Grill at The Food Hall with the BBQ Pork Belly with Chimichurri and Pickles (P 380), an elegantly plated dish with tender sous-vide pork belly lined with salsa verde, pickled onions, cucumber and fresh cilantro drizzled with nutty chimichurri. The richness of the pork belly is perfectly tempered by the sharp flavors of the pickled onion followed by the chimichurri, cucumber and fresh cilantro for that perfect, well-rounded finish. 


If you're really hungry, The Food Hall has the perfect platter. The sumptuous and impressive Wagyu BBQ Brisket Platter (P 990) includes tender slabs of melt-in-your-mouth 36 hour Sous Vide Wagyu Beef Brisket paired with fall-off-the-bone Half-Rack BBQ Ribs served with French Fries and House Coleslaw for that festive feast at The Food Hall.  

The slabs of Wagyu Beef Brisket deliver bold and beefy flavors yet refreshingly clean notes lingering long after the last bite. In contrast, the Half-Rack BBQ Ribs with its sweet BBQ glaze bring just a whisper of smokiness to complete the flavors. Paired with French Fries and House Coleslaw, it's the perfect platter ideal for sharing.   


The Grill's Miso-Glazed Hamachi Collar (P 565 good for two) is a light and refreshing option with delicately char-grilled and miso-glazed Hamachi Collar and Miso Eggplant served with steamed rice. The mildly sweet and salty notes of the miso perfectly complements the delicate flavors of the fish.   


Southeast Asian flavors are also recreated with Chef Carlo Miguel's version of the classic Indonesian dish with his Beef Cheeks Rendang (P 495). The fork-tender slow-braised beef cheeks gently simmered in coconut milk and Asian spices deliver deep and vibrant notes, served with rice and crispy shrimp krupuk for a complete meal. The richness and depth of the beef cheeks and the spiced rendang sauce are balanced by the pickled onions, cleansing the palate for another heaping spoonful.


Soon on the menu is Chef Carlo Miguel's comforting take on a traditional Thanksgiving dish, the 2-Part Turkey Steaks in Peppercorn Gravy with Cranberry Relish and Pumpkin Puree. With tender slices of both white and dark meat, the traditional flavors of Thanksgiving are recreated in one plate.


And who doesn't like fried chicken? Chef Carlo Miguel's new Juicy Fried Chicken Basket (P 445) loaded with buttermilk battered chicken leg quarter, homemade bacon and corn muffin and crisp fries tastes as good as it looks. Tender, juicy and crispy on the outside, the well-seasoned fried chicken is as good as it gets. The homemade bacon and corn muffin along with the fries complete the dish.

A sumptuous and hearty meal just isn't complete without that mandatory sweet ending. Chef Carlo Miguel and his team prepared their signature desserts to complete our experience at The Food Hall. Sugar is caramelized to a light crispness with a torch for the classic White Chocolate Raspberry Creme Brulee (P 220)... 


...while a scoop of silky smooth vanilla ice cream is added to the Brown Butter Chocolate Chip Skillet Cookie (P 220) and finished with a drizzle of salted caramel and thick chocolate sauce...


...and the Dark Chocolate Souffle (P 320) with salted caramel sauce and served with a side of vanilla ice cream ends our feast at The Food Hall on a high note.
