Bold and vibrant South American flavors take the spotlight with the latest edition of What's Your Beef, a novel Four-Hands Happy Hour collab by Chefs Chris Oronce and Sebastian Barcudes at Wolfgang's Steakhouse. The curated  menu features different prime cuts of beef with a unique South American spin for refreshing and hearty bites and libations. The novel What's Your Beef series at Wolfgang's Steakhouse remains one of the most innovative offerings from the legendary institution allowing diners to experience and discover a variety of prime cuts of beef in creative executions. Transforming the Happy Hour concept and taking it up a notch, the chef-driven creations served in small plates paired with equally inventive cocktails redefines the mid-afternoon tradition in the elegant Wolfgang's Steakhouse style (see more on the previous editions of What's Your Beef at Wolfgang's Steakhouse on my posts, What's Your Beef? The Four Hands Happy Hour Collab by Chefs Edward Buguia and Chris Oronce at Wolfgang's Steakhouse with its comfortingly familiar local flavors from late October last year). Now on its third run, Chefs Chris Oronce and Sebastian Barcudes brings the flavors of South America in a curated menu for the latest edition of What's Your Beef at Wolfgang's Steakhouse


Available from Monday to Saturday from 11:00 am to 10:00 pm at the bar and al fresco area, the Four-Hands Happy Hour What's Your Beef menu are offered at The Podium, Gateway 2 Araneta, BGC, Newport and City of Dreams branches of Wolfgang's Steakhouse. Like the previous editions, the current menu by Chefs Chris Oronce and Sebastian Barcudes celebrates the finest beef in two sumptuous menus for Monday-Wednesday-Friday and Tuesday-Thursday-Saturday. Each set menu includes four lavish plates plus dessert best paired with the curated cocktail creations. The menu sets start at P 1,988 with three beverages and P 2,188 with four beverages with each additional plate at only P 348


Tasty bites with refreshing sips have long defined the Happy Hour experience and Wolfgang's Steakhouse clearly raises the bar with its Four-Hands Happy Hour offerings. The creative collaborations make each edition refreshingly different and unique as Chef Sebastian Barcudes brings South American flair to the table along with the mastery of meat by Chef Chris Oronce in that signature Wolfgang's Steakhouse style. Each menu set offers two distinct flavor experiences capped by dessert. 


But first, Some Libations...

From 11:00 am to 10:00 pm, the exciting new cocktail selections for the third edition of What's Your Beef gets you in that smooth Happy Hour vibe...


...like the aptly named Tomajito garnished with cherry tomato and blended with refreshingly tart tomato water. The tomato water is the secret ingredient in this cocktail teasing the palate with its vibrant hints. The cool twist on the mojito is a light and easy libation to start your round at the bar with the fresh and clean sour notes of the tomato water lingering long on the palate. 


The rounded sweetness of the Guajava continues your flight of good vibes at the bar with its unique and deep fruity flavors. Everyone has their own rules on the Happy Hour tradition, but you have to agree that the right libations count for a big part of the experience. Both the Tomajito and Guajava are the perfect start to Wolfgang's Steakhouse's spin on Happy Hour. 


From the playfully inventive twists with the Tomajito and Guajava, Wolfgang's Steakhouse's bar goes more traditional with the Caipirinha for that festive Latin vibe. The Brazilian concoction made with cachaça, a sugarcane based spirit brings a bold citrusy sweetness from the lime shifting your Happy Hour into high gear. 


Don't pass up on the Pisco Sour, the classic Peruvian-Chilean cocktail made from a spirit of distilled fermented grapes with egg white and bitters. That sweet and sour burst of richness with each soothing sip opens up the palate for the second part of the Happy Hour experience at Wolfgang's Steakhouse...


And while you're enjoying your handcrafted cocktails, order up some crisp chips. A specialty of the house, these chips are complimentary at Wolfgang's Steakhouse. You can also opt for San Miguel Draft Cerveza Negra, Cerveza Blanca and Pale Pilsen or wine by the glass including Cabernet Sauvignon, Malbec, Sauvignon Blanc and Rosé. Monday-Wednesday-Friday What's Your Beef Set Menu

For this edition of What's Your Beef, Argentine Chef Sebastian Barcudes shares his culinary roots with a Latin-inspired spread using the finest USDA Prime Black Angus Beef in collaboration with Chef Chris Oronce of Wolfgang's Steakhouse for a sumptuous and elegant reinterpretation of Happy Hour. Beef is an integral part of Argentine cuisine, and the collaboration is yet another perfect match at Wolfgang's Steakhouse. Known for their signature steaks, the new menu explores different cuts of premium beef masterfully executed in the style Wolfgang's Steakhouse is known for around the world. Order up another cocktail...


The Empanadas Argentinas is an elegant rendition of the traditional beef stuffed pastry with lime and lemon gel and chili sauce. The light and delicately crisp pastry shell with its buttery notes is the perfect vessel for the savory beef filling draping the palate with a lingering richness for a delectable play on contrasting textures and flavors. The mildly sweet hints from the chili sauce completes the Latin flavors with its subtle smoky hints. 


Sliders are often part of the Happy Hour ensemble, and Wolfgang's Steakhouse flexes the cool Latin vibe with chorizo for a jazzed up version. The Chorizo Burger with its juicy patty on soft brioche bun topped with Provoleta cheese paired with chorizo chips is another tasty rendition by Chefs Sebastian Barcudes and Chris Oronce


The savory richness of the juicy pork chorizo patty is made even richer by the Provoleta cheese adding layers of flavor with each bite. And the crisp chips with chorizo are the perfect side. 


The Costillas de Ternera features a slab of fork-tender braised short ribs crowned with a delicately crisp tuille with Andean spices. The elegantly plated course highlights once more the exquisite quality of USDA Prime Black Angus Beef braised for hours for that buttery finish. The light and crisp tuille brings a playful dose of contrasting textures capped by the deep flavorful notes of the Andean spice blend. 


Next, beef skewers fresh off the fiery grills are plated and served. The Anticuchos offer another flavorful taste of South American culinary traditions with mini elote, corn sauce and chimichurri. The richness of the beef with its subtle smoky hints are perfectly complemented by the delicate sweetness of the corn sauce and the nutty notes of the chimichurri. One bite and you'll soon find out that two skewers just isn't enough. And that's your cue to order up another plate. And one more cocktail. 


Both set menus include dessert with the Alfajores with Hot Chocolate to complete your Happy Hour experience at Wolfgang's Steakhouse. The indulgent sandwich cookies with sweet dulce de leche filling is the perfect sweet ending made even better with a soothing cup of hot chocolate. Mondays, Wednesdays and Fridays are looking good so far at Wolfgang's Steakhouse but wait until you see what's on the menu for Tuesdays, Thursdays and Saturdays...


Tuesday-Thursday-Saturday What's Your Beef Set Menu

If you loved the set menu on your first visit, it's totally understandable if you return the very next day for the Tuesday-Thursday-Saturday What's Your Beef Set Menu. Order up the Tomajito to begin your Happy Hour at Wolfgang's Steakhouse...


For the first course, the Chipa de Carne unveils another layer in the colorful weave of South American flavors with cassava flour cheese pastry filled with ground beef and topped with Parmesan crisp. The play on contrasting flavors and textures tease the palate with the subtle sweetness of the cassava flour cheese pastry, savory ground beef filling and pronounced sharpness of the Parmesan crisp coming together in an elegantly seamless and balanced finish. 


The Feijoada is a hearty South American stew with short rib, bacon and chorizo along with black beans, Brazilian rice and torresmos. A light meal in itself, the Feijoada celebrates the fusion of different culinary cultures in a bowl masterfully recreated by Chefs Chris Oronce and Sebastian Barcudes. The medley of savory meats along with beans and rice completes the stellar cast with each distinct flavor and texture complementing the other. 


The classic Lomo Saltado with USDA Prime Black Angus Beef grilled hanger steak, tomatoes, onions and soy-ketchup and cilantro sauce is another savory number weaving complex savory notes bannered by the premium beef. The soy-ketchup sauce adds a distinct layer of salty and sweet notes to temper the richness of the beef along with the cilantro sauce. Like all the previous dishes, it's the beef that truly shines as the consistent and recurring theme in the What's Your Beef set menus at Wolfgang's Steakhouse


The fourth and final dish for the Tuesday-Thursday-Saturday What's Your Beef Set Menu is the Carne de Res with spiced grilled skirt steak and grilled jalapeños laid on smoked spicy red bell pepper sauce. The dish brings rich, deep and complex flavors to your Happy Hour tipple at Wolfgang's Steakhouse. Served with assorted grilled vegetables and sweet potato chips, the Carne de Res clearly highlights how premium quality beef transforms any dish masterfully executed at Wolfgang's Steakhouse.

The blend of spices doesn't hold back the savory richness of the beef, complementing it for even bolder and robust notes with each slice and bite.
