Flavors of Boracay: Nostalgic Bakery Treats From Boracay's MarTinapay

Pan de Coco, Hopia Sibuyas and Banana Muffins, tasty neighborhood bakery treats that bring back fond memories of countless carefree summers...

...and you'll find it all here, and more, at Boracay's popular MarTinapay. It's one more layer to the emerging culinary landscape in one of the world's best beaches. And one more reason to go back to Boracay and start the summer season right.

Chef Martin Jickain revives the local bread making culture with his wittingly named MarTinapay, bringing back nostalgic neighborhood bakery staples to the island paradise (for more on Chef Martin Jickain of White House Beach Resort and MarTinapay, see my earlier post, Flavors of Boracay: Completing The Boracay Experience with Sumptuous Cuisine at White House Beach Resort). It's no surprise that MarTinapay supplies most of the resorts in the island. From Spanish Bread to Cheese Rolls, hot Pan de Sal and other popular staples, MarTinapay's ovens are fired up all day and all night to serve you some of the freshest and tastiest baked bread on the island. Take their Banana Muffins, soft and moist with a subtle sweetness...

...and the Pan de Coco, probably the softest and sweetest I've had in years. The texture of the pillow-soft buns are just way better than the usual variety, often dry, hard and chewy to the bite. Freshness makes all the difference. Hands down, MarTinapay serves the best Pan de Coco. Period.

The soft and sweetened shredded coconut filling delivers fresh and clean flavors, without that musty aged flavor of the common variety found here in the metro.

Then, there's the traditional Hopia Sibuyas, a flaky bread stuffed with sweetened onions with its delectable play on flavors and textures. Best paired with a freshly brewed cup of coffee, MarTinapay's Banana Muffins, Pan de Coco and Hopia Sibuyas are some of Boracay's best finds.

When you're hit by a sudden craving for Pan de Coco or Hopia Sibuyas in Boracay, well, you're in the right place. You'll find MarTinapay's fresh-baked treats at Station Juan Bakeshop (L) located behind White House Beach Resort in Station 1. You can also head up to MarTinapay Goto Pares (R) across Fairways and Bluewater Resort.

Take a bag and hit the beach with some tasty nostalgic treats from MarTinapay and savor local flavors. That's another tasty layer in the Boracay experience...

MarTinapay is located at Boracay Main Road, 5608 Boracay and is open 24/7. You can also find MarTinapay's fresh-baked treats at Station Juan Bakeshop just behind White House Beach Resort.
