At an exclusive sneak preview, Chef Ivan unveiled his special Father's Day rib creations at the al fresco area of Brotzeit. Served on long wooden boards, the ribs are an impressive sight. Ribs three ways, dads deserve nothing less at Brotzeit.
Say cheese. The Cheese & Marinara (P 2,500) features a full rack of grilled pork spare ribs topped with a crust of melted Emmental, Parmesan and Gouda with onions and served with thick and tart Marinara Sauce. The addition of a blended cheese crust with onions adds a savory richness complementing the smoky notes of the juicy pork ribs, completed by a dip in the equally rich Marinara. Each bite bursts with complex layers of flavors with the cheese blend cutting through the unctuous smoky flavors of the pork ribs with the Marinara adding that perfect finishing touch. Each distinct note from the various components of the dish comes together seamlessly, enhancing without overwhelming the other for uniquely balanced flavors.
The Mediterranean (P 2,500) brings the vibrant notes of the region's rich spices to the palate topped with the clean, fresh and bright flavors of Sweet Pepper and Apricot Salsa. The play on sweetness and tartness from the fresh salsa tempers the savory richness of the pork ribs perfectly for a unique rib experience.
The ribs are masterfully executed, falling-off-the-bone cleanly with its fork-tender texture from hours of smoking. The addition of the Sweet Pepper and Apricot Salsa transforms the ribs, draping it with fresh and bold flavors experienced with each and every bite. I enjoyed the combination of fresh salsa with ribs combo with its refreshingly tart notes as a flavorful contrasting counterpoint to the pork ribs setting it apart from the usual.
Then, there's the classic Honey Bavarian (P 2,500) slathered with their proprietary garlic beer and barbecue infused sauce.
