Raise a Toast with Sumptuous Ribs Three Ways for Father's Day at Brotzeit

The Honey Bavarian, Cheese & Marinara and The Mediterranean. Brotzeit brings bold, new flavors to grilled pork ribs with three savory options just for Father's Day. And here's a sneak peek...

Brotzeit Philippines' Culinary Director, Ivan Maminta, set out to create unique and savory grilled pork ribs for a memorable Father's Day celebration. One bite is all you need to know that Chef Ivan succeeded with his trifecta of fall-of-the-bone pork ribs for dads on their special day.

Fathers deserve the best, and there's nothing like smoky, juicy fall-off-the-bone grilled pork ribs paired with a cold beer to celebrate his day. Served with Buttered Corn, Cheese SpƤtzle, Roasted Vegetables and Potato Wedges, give dad the full rack on Father's Day with Brotzeit's newest offerings fresh from the smoker and grill...

Chef Ivan complements his classic Honey Bavarian Ribs at Brotzeit, the Ripperl, with two new creations drawing inspiration from Italian and Mediterranean flavors for a refreshing spin with vibrant notes. The Cheese & Marinara and Mediterranean Rib Racks infuse rich flavors complementing the ribs for a novel take you just won't find anywhere in the metro. Starting with premium Belgian Pork and smoked in-house, Chef Ivan finishes the ribs on the grill topping it with his specialty blend of fresh ingredients.

Bakuna Benefits for the New Normal

But first, some good news. Pull out your vaccination card and enjoy a refreshing Apfelschorle (free for a minimum spend of P 500), a crisp and soothing blend of apple juice and carbonated mineral water that's perfect for the lingering summer heat. That's just Brotzeit's small way of saying thank you for being part of the solution to this lingering pandemic. And just for your peace of mind, the staff at Brotzeit in both BGC and EDSA are also fully vaccinated. With all the health and safety protocols in place, you can sit back and enjoy your beer with tasty bites without the worry. And if you have your vaccination card, the Apfelschorle is your reward.

The quarantine experience continues to change and transform our daily routine, with dining at home, the rise of the food delivery culture and increased online usage emerging as new consumer habits. Brotzeit adapts to the new normal with the implementation of all health and safety protocols as well as 100% vaccination of its entire staff. Brotzeit also offers pick-up, take-out and delivery of its specialty dishes as it pivots to changing consumer habits in a challenging new normal.

Starting Right at Brotzeit

Any visit to Brotzeit isn't complete without the mandatory starters, like the Brotzeit Brot or Best of Brotzeit (P 480) featuring Leg Ham, Belly Bacon, Emmentaler Cheese, Red Bell Peppers, Boiled Egg, Cocktail Onions, Pickles, Tomatoes and Cream Cheese on fresh-baked crusty bread...

...or the Klein Wurstplatte (P 390), a selection of sausages served with an assortment of dips, sauerkraut and pickles. Wash it all down with a cold Bavarian draft beer and your Brotzeit experience is off to a great start.

I Like to Rib It, Rib It!

At an exclusive sneak preview, Chef Ivan unveiled his special Father's Day rib creations at the al fresco area of Brotzeit. Served on long wooden boards, the ribs are an impressive sight. Ribs three ways, dads deserve nothing less at Brotzeit.

Say cheese. The Cheese & Marinara (P 2,500) features a full rack of grilled pork spare ribs topped with a crust of melted Emmental, Parmesan and Gouda with onions and served with thick and tart Marinara Sauce. The addition of a blended cheese crust with onions adds a savory richness complementing the smoky notes of the juicy pork ribs, completed by a dip in the equally rich Marinara. Each bite bursts with complex layers of flavors with the cheese blend cutting through the unctuous smoky flavors of the pork ribs with the Marinara adding that perfect finishing touch. Each distinct note from the various components of the dish comes together seamlessly, enhancing without overwhelming the other for uniquely balanced flavors.

The Mediterranean (P 2,500) brings the vibrant notes of the region's rich spices to the palate topped with the clean, fresh and bright flavors of Sweet Pepper and Apricot Salsa. The play on sweetness and tartness from the fresh salsa tempers the savory richness of the pork ribs perfectly for a unique rib experience.

The ribs are masterfully executed, falling-off-the-bone cleanly with its fork-tender texture from hours of smoking. The addition of the Sweet Pepper and Apricot Salsa transforms the ribs, draping it with fresh and bold flavors experienced with each and every bite. I enjoyed the combination of fresh salsa with ribs combo with its refreshingly tart notes as a flavorful contrasting counterpoint to the pork ribs setting it apart from the usual.

Then, there's the classic Honey Bavarian (P 2,500) slathered with their proprietary garlic beer and barbecue infused sauce. Topped with onions and bell peppers, the Honey Bavarian is a tried and tested formula and one of Brotzeit's popular staples (for more on the Ripperl, see my previous post, Al Fresco at Brotzeit for a Tipple and Take-Out).

The sweet, smoky and sticky glaze adds a sharpness to the ribs, lingering on the palate long after the last bite. Ribs, three ways. Each one excellently prepared by Chef Ivan and his team at Brotzeit.

Can't decide what to get? No worries, you can enjoy all three in a sampler platter so you don't miss out on Brotzeit's newest grilled pork rib offerings for Father's Day.
