Luxurious Sundays with Italian Flair at the Finestra Italian Sunday Brunch in Solaire Resort

This may be the most luxurious Sunday brunch yet in the metro...

Imagine brunch with a sumptuous array of fresh seafood, pizza, pasta, steaks and desserts in an elegant setting with a view of the bay. You can stop dreaming, you'll find it at one of the metro's best restaurants. Finestra Italian Steakhouse at Solaire Resort transforms and elevates the brunch dining experience with the Finestra Italian Sunday Brunch showcasing an impressive menu prepared by Chef de Cuisine Alan Marchetti. Take a closer peek at Sunday brunch redefined with an opulent  Italian spin...

Finestra Italian Steakhouse at Solaire Resort has always been the perfect stage for any memorable dining experience with its spacious interiors draped by natural light from panoramic floor-to-ceiling glass walls and its unique open kitchen configuration (for more Finestra Italian Steakhouse, see my posts, An Epic Dining Experience in Two Memorable Acts: Momento Aperitivo Cocktails and Pasta Degustation at Finestra Italian Steakhouse at Solaire Resort from last month and #MeatMeAtFinestra: An Italian Spin on the Classic Steakhouse Vibe at Finestra from four years back). This time, Finestra Italian Steakhouse takes on Sunday brunch lavishing it with an elegant Italian flair...

...orchestrated by Chef de Cuisine Alan Marchetti. Authenticity, tradition and the finest and freshest ingredients prepared in classic traditional techniques are what sets Finestra Italian Steakhouse apart from other fine dining establishments driven by Chef Alan's uncompromising commitment to excellence and quality. Long known for their savory premium steaks, handmade pasta and pizza, Chef Alan takes you on a culinary journey back to Rome where he grew up firing up authentic Italian dishes. For the Finestra Italian Sunday Brunch, Chef Alan weaves his elegant Italian touch to a sumptuous and memorable dining experience. From 11:30 am to 3:00 pm, experience Sunday brunch with the flamboyant panache and elegance of Italy at Finestra Italian Steakhouse.

A glass of bubbly to open up the palate? Why not. A glass of Nicolas Feuillatte Champagne from France hits the spot rather nicely.

Champagne, a wide selection of smooth Italian and French reds and crisp whites and digestifs like Amaretto, Sambuca and the restaurant's own Limoncello offer countless options for that perfect start to your Finestra Italian Sunday Brunch.

You can also opt for their specialty handcrafted cocktails like the Giramondo with bold yet soothing notes made with a blend of Bacardi Carta, Campari, sherry and salted honey syrup garnished with dried oranges (for more on their Italian inspired cocktails, see my previous post, An Epic Dining Experience in Two Memorable Acts: Momento Aperitivo Cocktails and Pasta Degustation at Finestra Italian Steakhouse in Solaire Resort). If you prefer a non-alcoholic beverage, Finestra Italian Steakhouse also offers Italian Iced Teas like the The Alla TescaThe Alla Rose and The Alla Limone along with fresh fruit juices, sodas and Still & Sparkling Water

A soothing tipple to wet the palate and you're ready to feast. The Finestra Seafood Towers are an impressive way to start your brunch experience pairing well with your champagne or cocktail. Available in two options, On Ice and Hot, enjoy the day's freshest and bountiful catch elegantly stacked and served to your table...

...for an indulgent start to your Finestra Italian Sunday Brunch. At the top tier of the Finestra Seafood Tower On Ice, you'll find plump Poached Prawns, succulent Mussels, sweet and briny Clams and fresh Welks flown in from France served with classic Cocktail Sauce, Whipped Horseradish, Raspberry Mignonette and Amalfi Lemon...

...and that's just the top tier, literally and figuratively of the Finestra Seafood Tower on Ice. But the quality and freshness of the seafood remains as impressive at the lower trays...

...with imported fresh shucked Gillardeau Oysters from France in the middle tier served with Amalfi lemon...

...and fresh steamed Boston Lobsters, Blue Swimmer Crabs and Curacha or Spanner Crabs at the bottom tray. From the top all the way to the bottom tier, the Finestra Seafood Tower On Ice adds an elegant layer to your Sunday brunch experience. Fresh and clean flavors with sweet briny notes that can only come from the very best catch, the Finestra Seafood Tower On Ice is how you start Sunday brunch.

One more plate of Boston Lobster, Curacha, Poached Prawn, Mussels and Gillardeau Oysters simply drizzled with a fresh squeeze of Amalfi Lemon, it just doesn't get better than that. But at the Finestra Italian Sunday Brunch, it always gets better with the next dish.

Back at the open kitchen, Chef de Cuisine Alan Marchetti prepares the equally impressive Hot Finestra Seafood Tower...

...topped with Rockefeller Oysters...

...Herbed Baked Mussels...

...and Baked Boston Lobsters along with Razor Clams, Grilled Prawns, Welks in Spicy Tomato and Blue Swimmer Crabs to complete another stellar cast for the Hot Finestra Seafood Tower

Served with Tartar Sauce, Whipped Horseradish, Lemon Butter Sauce and Amalfi Lemon, the Hot Finestra Seafood Tower brings its own unique set of rich flavors from the oven and grill to the table for a refreshing and sumptuous take on fresh seafood.

The creamy cheese crust on Baked Boston Lobster, the rich play on flavors and textural contrasts with the Herbed Baked Mussels topped with crisp panko breading, the briny sweetness of Clams and Curacha and flavorful richness of Rockefeller Oysters are a feast in itself. The Finestra Seafood Towers, both On Ice and Hot, already gives you an idea just how lavish brunch can be at Finestra Italian Steakhouse. If you want to go all the way, you can opt for the indulgent Oscietra Caviar (P 6,500 for 30g) also available separately for an additional cost. But we still have so much more to try at the Finestra Italian Sunday Brunch like their Brunch Specials...

The Foie Gras Terrine with Quince Jam and Dehydrated Pear is one of eleven dishes from the Brunch Specials at the Finestra Italian Sunday Brunch. Packed with bold flavors and an intense richness, the Foie Gras Terrine lays on another indulgent weave to the Finestra Italian Sunday Brunch dining experience.

A dab of the Foie Gras Terrine with Quince Jam on soft, buttery and delicately crisp brioche is pure indulgence draping the palate with a deep and smooth buttery finish. The tartness of the Quince Jam and subtle sweetness of the dehydrated pear brings a contrasting sharpness to temper the richness of the foie gras for delicately balanced flavors. But it's the lightly crisp, soft and buttery brioche toast that adds the perfect finishing touch.

In between bites, order a refreshing salad with your sumptuous feast at the Finestra Italian Sunday Brunch. At the Finestra Italian Sunday brunch, diners can choose from the Caesar's Salad, Buffalo Mozzarella or the Classic Nicoise Salad with tomatoes, egg, lightly seared tuna and green beans drizzled with an olive oil-based vinaigrette. Garden fresh and crisp greens and vegetables with seared tuna and egg combine for a light yet satisfying salad.

From the Brunch Specials selection, the Octopus Carpaccio with olives, tomatoes, basil and dill is another must-try dish with thinly sliced fork-tender and melt-in-your-mouth octopus with its delicate briny sweetness complemented by the mildly sharp notes from the olives, tomatoes and dill. Masterfully executed by the talented team in the kitchen, it's one other dish that clearly highlights the freshness and quality of ingredients used at Finestra Italian Steakhouse.

Back to the Finestra Seafood Tower to finish off the succulent fresh Welks, both poached and simmered in spicy tomatoes. The size and clean notes of the welks or sea snails add interesting flavors to the Finestra Italian Sunday Brunch. Imported from France like the Gillardeau Oysters, the firm texture and subtle sweetness of welks will have you going for another. It's rare to find delicacies like this in the metro, but you'll find it here at Finestra Italian Steakhouse.

What's brunch without some benny? The Brunch Specials at the Finestra Italian Sunday Brunch also offers the Finestra Eggs Benedict with Parma ham and Hollandaise sauce on crisp focaccia...

...and the Potato Hash Salmon with poached egg draped with Hollandaise on salmon. Other tasty options from the Brunch Specials include the Vitello Tonnato with capers, anchovies and roasted veal in tonnato sauce, Fried Squid, Smoked Salmon, Salumeria Board, Scrambled Egg & Truffles, Eggs Florentine and the Finestra Breakfast with eggs prepared to your preference, Italian sausage, crispy Pancetta and tomatoes.

No visit to Finestra Italian Steakhouse is complete without Chef de Cuisine Alan Marchetti's specialty pizza and pasta like the Diavola topped with spicy salami, Mozzarella and black Taggiasca olives on a crisp crust straight off the brick oven. Other pizza options available at the Finestra Italian Sunday Brunch are the Funghi with smoked Scamorza, Mozzarella, Parmesan and wild mushrooms and the classic Margherita with homegrown tomatoes, basil, Mozzarella and extra virgin olive oil.

For the pasta selection, Chef Alan serves all the traditional staples like the Risotto Asparagus with soft and fluffy Carnaroli rice, fresh asparagus and wild mushrooms...

...the Gnocchi Four Cheese with honey and walnuts...

...the Lobster Spaghetti with chili, garlic and tomato bisque...

...the Green Duck Ravioli with vegetable brunoise and rosemary jus...

...the Clams Linguine with cherry tomatoes, garlic and chili...

...and Pappardelle Tartufate with cream, truffle paste and Parmesan. Each pasta and pizza creation at Finestra Italian Steakhouse reflects Chef Alan's own culinary journey, recreated, plated and served to your table.

Then, there are the savory mains. The Finestra Italian Sunday Brunch features eight sumptuous options including the Whole Josper-Cooked USDA Ribeye carved and served with roasted potatoes, baked carrots, slow-cooked red onions and baked garlic. The Josper Grill is the newest addition to the open kitchen at Finestra Italian Steakhouse, adding to the restaurant's savory offerings. The combination of charcoal grill and oven brings a unique flavor to meats finished with a smoky richness. This is the fitting main course for the Finestra Italian Sunday Brunch and if you're game for more, order another plate.

But if you want to try something different, you can't go wrong with the Lobster Thermidor crusted with herbed Bechamel sauce. The tender yet firm texture of the lobster with its delicate briny sweetness pairs well with the Bechamel crust for an added layer of richness. Other savory mains at the Finestra Italian Sunday Brunch include USDA Filet Mignon served with green beans and duck fat fried potatoes, the fork-tender Braised Beef Cheek on Polenta Taragna, Baked Norwegian Salmon, Pacific Seabass Fillet, Brioche Lobster Roll and Baked Lobster with Cheese.

For dessert, Chef de Cuisine Alan Marchetti has even more surprises for you at the Finestra Italian Sunday Brunch...

Affogato in mere minutes, with your choice of toppings. The novel Affogato Station offers handmade ice cream in chocolate and vanilla flavors topped with fresh berries and fruits, chocolate chips, marshmallows, biscotti, alcohol or coffee for an indulgent highlight to your Finestra Italian Sunday Brunch experience.

With a wide variety of toppings, you can customize your very own Affogato just the way you like it. Add some Kahlua, Amaretto, Bailey's, whisky or a tempting selection of sweet syrups along with other toppings and enjoy.

If you still want more, go ahead and have your fill with the decadent dessert selection at Finestra Italian Sunday Brunch like the specialty Finestra Tiramisu, Vanilla Panna Cotta, Chocolate Zuccotto Cake, Lemon Meringue Cheesecake, Mango and Passion Fruit Semifreddo and Mixed Berries Zabaglione served family style.

This may be the most opulent Sunday Brunch yet, and it's no surprise that Chef de Cuisine Alan Marchetti and Finestra Italian Steakhouse are behind this lavish Sunday feast.
